Until about a year ago, it never occurred to me that oatmeal could be a savory dish, but once I stumbled upon it (thanks, Penny de los Santos!), it quickly became one of my favorite breakfast (or breakfast-for-dinner) treats. The egg on top mixes up the textures, which could get a little blah by the end of the bowl without it.

Great British Fool

At the mention of this British dessert, my mind races through the various references to fools, from the fool that accompanied King Lear on his journey across the howling heath, to the modern question "What kind of fool are you?" But the name of this delicate dessert actually comes from the French word fouler, meaning to press or crush, referring to the crushed fruits that are gently folded into thick cream. It is this simplicity that makes the dish shine. And as the British fool, I get to choose the berries and sing "here we go round the mulberry bush" as I dish up!

Cornish Hen in Port Wine and Fig Preserves

Cornish game hens are just the right size to serve two people and nestle into the slow cooker with ease. Port wine is an excellent ingredient for slow cookers, as it always provides a little richer color for the ingredients. Preserves, jams, and jellies are handy ingredients to create easy sauces for poultry and meats. For a darker skin, baste the hen during cooking with sauce from the bottom of the slow cooker.

5-Minute Protein Truffles

These protein "truffles" are so ridiculously easy that I feel somewhat silly adding them to this collection. Then again, my super-simple, silly recipes are often my most popular. They are certainly favorites in my repertoire, in large part because of their fast factor, but also because of their portability and candy-like appeal. Plus, they are endlessly customizable by varying the spices, extracts, and other add-ins, or by giving them a chic coating of chia seeds, cocoa powder, or chopped nuts. Who says pretty and power can’t go together?

Pickled Red Onions

Vegan (when made with agave nectar or sugar) This trick will alter and augment your cooking: Pour boiling water over sliced or diced red onions, then transfer them to a solution of vinegar, sweetener, and salt. The onions will brighten into a gaudy shade of purplish-pink and will keep indefinitely, mysteriously retaining their bright color and crisp texture. rather than slice, the onions, if they are headed for one of the cold soups.) You can vary the cut of the onions—and also the amounts of sweet and salt. Use as a dramatically colorful and refreshing tiara atop dinner plates, open-faced sandwiches, salads, cheeses, grilled tofu, or fish—anything savory. I use these often as an ingredient in cold soups and saladitas. (Mince, rather than slice, the onions, if they are headed for one of the cold soups.) • Use a very sharp knife or a food processor with a thin slicing attachment to cut the onions most easily.

Seasonal Fruit–Herb Saladitas

Vegan The simplest saladitas in my repertoire are the ones that pair a single fruit with just one fresh herb. These are as flexible as they are easy. Extra-virgin olive oil, fresh lemon or lime juice, and salt and pepper are all optional. A small pile of Pickled Red Onions is always welcome on top. Make these shortly before serving.

Dry Brine for Turkey

Cookbook author and culinary pro Molly Stevens created this recipe exclusively for Epicurious. Dry brining involves sprinkling salt over the entire surface of a turkey and letting it sit for at least 12 hours and up to 2 days. It may look like a lot of salt, but keep in mind that the salt won't remain on the outside of the turkey and there needs to be enough salt to penetrate the entire thickness of the bird. Keep in mind that it's best not to stuff a brined turkey, because the juices will concentrate in the cavity and overseason your stuffing. Lemony Yogurt Sauce

This bright, creamy yogurt sauce is lightly flecked with herbs and is great for everything from drizzling over savory bowls of grains to spooning on top of fried rice, breakfast hash, or Buckwheat Crepes. Double the recipe for a larger group or to keep a little jar of the sauce in the refrigerator. It's season-less, really. Morning Notes: Depending on the kind of yogurt you use and how you prefer the consistency of this sauce, feel free to add a spoonful (or two) of cold water to thin it out.

Honeyed Ricotta

This may be my favorite accompaniment in the book. It's wonderful on pretty much everything, especially Buckwheat Crepes or Whole-Grain Buttermilk Pancakes, or stirred into The Very Best Oatmeal. Ricotta is traditionally made from the whey that's left over from the cheese-making process, and it's often extremely mild. This recipe brightens the simple cheese with a combination of honey, vanilla, and lemon zest¿transforming it into a light morning topping that could rival any high-end yogurt or jam.
