I always keep a can or two of refried beans in the pantry and flour tortillas in the freezer for those nights when I am on the verge of reaching for a take-out menu. Even if you are bone-weary by dinnertime, these two ingredients are the ticket to nearly effortless yet highly satisfying meals such as this one and the following burritos.

Ingredients

2 burrito-size (10-inch) flour tortillas
One 16-ounce can spicy fat-free refried beans
1 cup grated cheddar cheese or cheddar-style soy cheese
Regular or green (tomatillo) salsa

Preparation

  1. Step 1

    Place one of the tortillas on a lightly oiled round casserole dish.

    Step 2

    In a mixing bowl, combine the refried beans with 1/4 cup warm water and stir together.

    Step 3

    Spread the refried beans over the tortilla, sprinkle with the grated cheese, top with the remaining tortilla, and cover.

    Step 4

    Microwave until piping hot, 2 to 3 minutes. Cut into wedges to serve, topping each with a little salsa.
