  1. Spit the duckling and cook it, basting with any of the glazes mentioned under broiled duckling . At the very last, move the duckling closer to the heat to make the skin crisp. Spitted duckling cooks to the pink stage in about 1 1/4 hours, to the well done stage in 1 1/2 hours.
