Step 1
For cooking purposes, not topping purposes, add 1 tablespoon mild vinegar or lemon juice to 1 cup of evaporated milk.
Step 2
For topping purposes, not cooking purposes, put cottage cheese in a blender or food processor, sweeten it to taste, and if it doesn’t taste right, add a tiny bit of vanilla extract.
Step 3
Or make crème fraîche (see, surprisingly, creme fraiche).
