  1. Bland

    Step 1

    This is a perfect opportunity to make a fancy (but simple) flavored butter. Cream some butter with crushed garlic, minced chives or green onions, or some (preferably fresh) herbs.

    Step 2

    If your rolls could stand a little more time in the oven, brush them with some beaten egg and sprinkle with poppy seeds or sesame seeds and put back into the oven for 5 minutes or so.

  2. Burned

    Step 3

    As long as they aren’t charred lumps of coal, you can probably salvage them by cutting or grating off the bottoms. If you need to grate the tops as well, brush them with a beaten egg and put back into the oven just to cook the egg. It will become shiny (and cover up your mistakes).

  3. Cold, stale

    Step 4

    If you’ve baked your rolls early to free up the oven for other things, you probably want to reheat them. You can do this while your turkey is resting. Either dip them briefly in cold water or spray with a spray bottle and put them in a 350°F oven until hot. Alternatively, wrap them in foil and heat for 5 minutes at 450°F. This second option works best for soft rolls.

  4. Dough resists shaping

    Step 5

    If your bread dough is unmanageable and won’t hold the form you’re trying to shape it in, let it rest for 5 to 10 minutes, covered with a dampened cloth, to allow the gluten in the flour to relax.
