    Roasting makes radishes sweeter. Toss them with oil and roast at 425°F for 30 to 45 minutes, or until tender and starting to brown.

    Step 3

    Soak them in ice water for 2 to 3 hours. If you like, add 1 tablespoon vinegar or the juice of one lemon to the water.
