This light and modern take on the espresso and tonic is layered in the glass.

Ingredients
2 oz. espresso or cold coffee
3–4 oz. chilled tonic water
Garnish: 1 lemon
Preparation
Step 1
In a mixing glass, stir together bourbon and espresso. Then build drink in a Collins glass: Fill glass with cubed ice, add tonic water, then add bourbon and espresso mixture on top by pouring slowly, allowing it to layer on top of the tonic water.
Step 2
Use a channel knife to zest lemon over the top of the drink, while also leaving a striped design on the lemon. Cut lemon into wedges and place one as a garnish on top of the cocktail.
