While traditional hot fudge recipes can take a fair amount of effort, this microwave hot fudge sauce recipe comes together quickly without any fuss. A combination of just five ingredients create a glossy hot fudge sauce that rivals more complicated, labor-intensive versions. Corn syrup, a key ingredient in any hot fudge recipe, gives the sauce a silky sheen and smooth texture that remains pourable and flowing when draped over ice cream. Here the syrup is mixed with milk, vanilla extract, and salt and microwaved until warm, then poured over chocolate chips. The chocolate melts into the corn syrup and creates an almost instant hot fudge sauce that’s ready to be served right away, but it also keeps well in the fridge in an airtight container and can be enjoyed anytime for a quick impromptu sundae. Ingredients

¾ cup light corn syrup
½ cup whole milk
2 tsp. vanilla extract
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
2 cups semisweet chocolate chips (about 12 oz.)

Preparation

  1. Whisk together ¾ cup light corn syrup, ½ cup whole milk, 2 tsp. vanilla extract, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a medium microwave-safe bowl. Microwave on high power until milk is just starting to simmer, 1–2 minutes. Remove from microwave and add 2 cups semisweet chocolate chips (about 12 oz.). Let sit 2 minutes, then whisk until smooth.

    Do Ahead: Hot fudge can be made 1 week ahead. Cover and chill.
