Ingredients

1 tablespoon butter
2 tablespoons chopped shallots
1 teaspoon chopped garlic
1/4 cup bottled clam juice
1/4 cup dry white wine
1 teaspoon yellow mustard seeds
1 cup whipping cream
2 1/2 tablespoons whole grain Dijon mustard
1 teaspoon honey

Preparation

  1. Melt butter in heavy medium saucepan over medium heat. Add shallots and garlic; sauté until tender, about 2 minutes. Add clam juice, wine and mustard seeds. Boil until liquid is reduced by half, about 2 minutes. Add cream. Boil until liquid is reduced to 1 cup, about 3 minutes. Mix in Dijon mustard and honey. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Before using, rewarm over low heat.)
