Ingredients

a 1/2-pound sweet potato
1 1/2 teaspoons minced peeled fresh gingerroot

In a large saucepan heat 1 1/2 inches of the oil over moderately high heat to 360°F. on a deep-fat thermometer, drop tablespoons of the sweet-potato mixture into the oil in batches, and fry the fritters, turning them, for 2 minutes, or until they are golden. Transfer the fritters to paper towels to drain.
