My brother, Al, is an inspiring teacher at Jamie Oliver's cooking school, Recipease. This is an adaptation of one of his favorite recipes to enjoy at home. For a wonderful spring stew, try adding some blanched asparagus, peas, and beans, or top it with a crust for a comforting pie .
Cooks' Note
(F) Pour into containers of the size you require (if you are making the Chicken, Ham, and Tarragon Pie you will need to keep back about half). Let cool before covering, labeling, and freezing.
(D) Let stand overnight in the fridge.
(R) Place in a pan over gentle heat until piping hot.
