Gondi—the word is a bawdy Persian expression for a certain part of the male anatomy—is a favorite food in many Iranian Jewish homes. These light, cardamom-scented dumplings look like matzo balls, but instead of matzo meal, they're made from ground chicken or turkey and chickpea flour. To get a clear, unclouded soup broth, cook the gondi in a separate pot of chicken stock, and then add them to the soup broth when serving. For a more casual presentation, cook the gondi in the same pot with the other soup ingredients. You can make the gondi dough the day before, and store it in the refrigerator.

The seasoned butter on this bird is a bright and herbal mix of chopped sage leaves and fresh orange and lemon zest, which bathes the breast with the essence of the Thanksgiving aroma. For the all-important gravy, we offer two homemade options for stock, as well as store-bought chicken broth. We can't rave enough about the gravy made from the brown turkey stock. Trust us when we say it produces the most soul-satisfying sauce, and because it's not dependent on the giblets from your turkey, it can be made weeks ahead and frozen. If you're hosting a smaller group for Thanksgiving this year, such as a group of four, or perhaps even just the two of you, we suggest forgoing the whole bird for a turkey breast with the same prep. A Simple Roast Turkey

The first Thanksgiving I took part in cooking was when I was 20, a college kid in Boston, living in a big, rambling house. The apartment was a kind of clubhouse devoted to a shifting list of priorities that included music, books, girls, beer, and food. On Thanksgiving we cooked a turkey. The recipe was my pal John Patrick Montaño's, and I still use it today: a roast bird glazed with a rosemary-infused teriyaki butter. The piney herb melds beautifully with the butter and sweet caramel of the mirin browning on lacquered skin. It results in flavor of astonishing depth.

The soft richness of the meal recalls Thanksgiving, then amplifies the memory, giving it a rakish flair.

Grill-Roasted Turkey

Grilling a turkey is one of the great dark arts of holiday cooking. It is an excellent choice for those who like to spend time outside, tending a fire and keeping away from family. It requires no skills beyond patience. The turkey ends up with a slightly more rustic flavor, smoky and rich. Two notes: First, use a brine to keep the bird moist, since opportunities for basting are hard to come by. Second, do not stuff the bird. Smoky turkey is excellent; smoky stuffing is not.
