Red Wine Citrus Vinaigrette
While I use this to dress my chicken salad (page 130), I also like it on soft bitter lettuces. Too often, we relegate vinaigrettes to greens, but they’re also good with proteins. This one, in particular, pairs well with salmon, either poached or slow-baked.
Slow-Cooked Salmon in Miso-Yuzu Broth
This broth is so good I could drink it by the bowlful. Be sure to serve this with steamed sticky rice. Even better: When I have leftover sticky rice, I press it into small cubes and fry them until crisp and golden brown. You can find konbu, bonito, miso, and yuzu at a Japanese grocery or a well-stocked Asian market.
Tagliatelle with Pistachio Pesto, String Beans, and Cherry Tomatoes
This pasta dish pairs creamy with crunchy, tart with sweet. Summer string beans also offer a little crunch to balance the juiciness of the tomatoes. I especially like using orange Sunbursts from my garden.
Wax Bean and Cherry Tomato Salad with Goat Cheese Dressing
Tangy goat cheese makes a perfect salad dressing for wax beans (haricots verts work well here, too). To balance the creamy cheese, I toss the sweet tomatoes with a bright, acidic vinaigrette. Together, they make an amazing summer salad.
Plum and Port Crostata
The filling for this Italian-style tart begins with a flavorful reduction of port wine and brown sugar; half a fresh Thai chile is added for a subtle—but entirely optional—bit of heat. Start with the best fruit you can find. Small, oval Italian prune plums are firmer and sweeter than other plums; plus, since they are a freestone fruit, their pits are not attached to the flesh and are therefore easily removed.
Thai Balls
A few months after the Shop opened we got a call from the Food Network asking if we would be interested in being guests on Big Daddy’s House with host Aaron McCargo, Jr. They asked if we could develop a new meatball for their Thai-themed episode. The recipe, which captures all of the fresh, wonderful flavors of Southeast Asia, was a big hit on the show and in the Shop as well. Be careful not to chop the herbs too finely and feel free to add extra chiles if you prefer your meatballs extra spicy. The garnish—crunchy peanuts, basil, and grated carrots hit with rice wine vinegar and soy sauce—is a killer. Serve it all with Peanut Sauce (page 67, optional).
Montreal Steak Spice
Montreal institutions like Gibbys and Moishes have been selling their own classic steak spice for decades. Here’s our take on the Montreal steak spice. This is an all-purpose seasoning used in many Montreal-style beef, pork, and steaky fish dishes.
Ginger Chicken
A simple stir-fry, one made with a great deal of ginger and typical Thai seasonings. It makes a great weeknight meal; serve it with jasmine or sticky rice. Information on Thai fish sauce (nam pla) is on page 500.
Stir-Fried Spicy Shredded Beef
This Szechwan specialty gets its heat from fresh chiles and its flowery, smoky aroma from Szechwan peppercorns. Since the beef is cut into such thin shreds, it takes little time to cook. Serve this with rice or noodles, along with stir-fried greens (page 463). Other cuts of meat you can use here: pork, preferably from the shoulder or leg (fresh ham); lamb, preferably from the shoulder or leg; boneless chicken.
Stir-Fried Potatoes with Chiles
The first time I was served this I found it completely bizarre, as you may. But I loved it instantly. It’s from Szechwan but is equally at home with Asian and European dishes, as long as they have some guts. The quality of this dish is maintained for only a few minutes; as it gets cold, it becomes far less appealing. So—really—prepare it at the last minute and serve it immediately.
Stir-Fried Squid with Basil and Garlic
A very, very fast dish, because the squid must be cooked only briefly to prevent toughness. So make your side dishes first; rice is the natural choice, and it will keep perfectly well over low heat while you stir-fry. Thai basil is so unlike Italian basil that they might as well be different herbs; not only does the Thai variety look different, but it is infinitely mintier. If you’re using Italian basil, therefore, you might consider adding a small handful of mint leaves. See page 500 for information on Thai fish sauce (nam pla). Tofu Salad with Peanut Sauce
This is a warm salad, combining a wide range of textures and flavors, great as a light lunch or a starter for any Asian meal. Although you can buy packaged fried tofu at many Asian markets—and that is undeniably convenient—it is much better homemade. Just be sure to remove as much of the water as you can, by firmly pressing the tofu between paper towels as detailed on page 491. Stuffed Tofu
Tofu is often, perhaps even usually, eaten as part of a vegetarian meal, but it’s also delicious when paired with shrimp or pork. This dish has some of the flavors and textures of Tod Mun (page 83), but the tofu adds a smooth texture and subtle flavor. For information on fish sauces like nam pla, see page 500. Serve this as an appetizer or as one of the centerpieces of a larger Asian meal. Use all shrimp if you like or substitute other meat for the pork.
Som Tum
This fiery, strong northern Thai specialty (if it’s made correctly, you will really reek after eating it, but it’s worth it) has become one of the most popular dishes in Thailand and at Thai restaurants in the States. When I was in Bangkok, I could not walk down the streets or through the markets without at least a dozen offers of Som Tum from the vendors, and it was hard not to stop for a little dish with some grilled meat and sticky rice. You can usually find green, or unripe, papayas and yard-long beans (and the Thai fish sauce called nam pla) at Asian or Latin groceries, but you can also substitute Granny Smith apples for the papaya and Napa cabbage for the beans.
Tomato Salad with Ginger
An unusual tomato salad, exceptionally fresh tasting it contains no oil—and terrific with any grilled food. You certainly don’t need to be making an Indian meal to serve it.
Miang Gung
I first had this appetizer as street food, near a market in Bangkok. The combination of raw ingredients normally used as flavoring agents for cooked dishes was intriguing and refreshing. The betel leaf used to hold everything together gave an additional bite to the dish. Betel leaves are impossible to find here, but the dish remains delicious with spinach leaves or even lettuce. If you’re not familiar with Thai fish sauce (nam pla), see page 500. You put it all together at the table, so it’s kind of fun. Serve this as the start to any meal featuring other food from Southeast Asia.
Basic Dipping Sauce
Every Vietnamese cook makes this dipping sauce, with the differences among them reflecting personal preferences and regional variations. In general, as you move south the sauce gets sweeter, hotter, and more garlicky. Yet no matter exactly how it is made, its role is always the same: to enhance and unify all the elements of a dish. As with much of Viet cooking, parameters apply more than rules. This recipe will help you develop your own version. Sensing subtle distinctions between sour, sweet, salty, and spicy requires practice. Plus, fish sauces differ, and even lime juice can be inconsistent. To deal with these variables, I don’t mix everything together at once, but rather break up the process to simplify matters for the taste buds. This allows for adjustments along the way. While you may omit the rice vinegar, it actually brightens the flavors and softens any harsh or bitter edges contributed by the lime juice. The garlic is optional; some recipes will suggest including or excluding it.
Spicy Coconut Sorbet
Why does coconut sorbet taste so rich, even without cream or eggs? Well, because there’s plenty of fat in the coconut milk itself. It’s one of the easiest sorbets in the world to make, thanks to the prevalence of decent canned coconut milk, but I like to give it a spark of heat, too. Eat this on its own, or with a cookie or other dessert of your choice. It goes especially well with chocolate. Remember that to make good ice cream with a machine that requires a prefrozen canister, you need to plan ahead and put the canister in the freezer at least 2 days before you’re going to make the ice cream. (I store mine there.)
Chile Chocolate Almond Bark with Salt Crystals
Remember the peanut butter cup commercials? Man and woman, so happy in their busy day, walking around with snacks in their hands, the sky above the color of a blue slushie the houses plastered in marzipan pastels, a happy-sounding tune of endless comic surprise piped through the air, the world a perfect place. Then—whoopsie, so clumsy of me—they smack into each other, exchanging flavors, and a wonderful new treat is born. Introducing nuts to chocolate is all well and fine and, sure, millions have been made on the combination. But if only the candymakers had the temerity to take the next step, something truly delicious could have come of it: chocolate, nuts, and a faint wave of chile heat all strummed like harp strings by the dexterous fingers of a luscious salt. Use this recipe to explore new dimensions of your favorite chocolate by trying it with a variety of salts. Choose the type and quantity of chile depending on your desire for heat.
