Spinach
Carrot, Spinach, and Rice Stew
I first ate this soupy stew (or stewy soup) at a lunch counter in Istanbul and was taken by its depth of flavor. It seemed that either the whole was greater than the sum of its parts or there were some hidden ingredients. It turned out to be the former, or nearly so; through an interpreter, I learned that the dish did not begin with stock but with water and that the only ingredient I was not seeing was a bit of garlic. The cook offered that one might add a bit of butter for richness but that he hadn’t done so with this batch. If you want to turn this into a more filling main course, use stock instead of water, add some cubed boneless chicken or lamb, season it with a little cumin or dill, and finish it with lemon. You’ll wind up with a bigger, more substantial Turkish-style stew, though not necessarily a better one.
Subz Miloni
Like many dishes from India, this one contains a lot of ingredients and requires a fair amount of precooking work but is easy to assemble. If you can find fresh paneer—the simple cheese that appears in many Indian dishes—by all means use it. But tofu makes a great substitute. Serve over rice or as part of a larger Indian meal.
Pakoras
Similar to Tempura (recipe follows), these are usually made only with vegetables—but a very wide assortment—and the batter is best when prepared with chickpea flour (also called besan or gram flour and available at Indian and many Asian markets and most health food stores). Traditionally, the batter also often contains anardana, a powder made from ground pomegranate seeds—if you can find some (try the same stores that have besan), add a teaspoon to the batter, along with the garam masala. Pakora batter can also be fried on its own, as a fritter; mix a medium onion, chopped, into it, and drop it by the tablespoon into the hot oil.
Spinach Pancakes
Another good pancake starter or side dish. At their best hot, but still good warm. You can use frozen spinach for this if that’s all you have.
Fried Wontons
Though not traditional, fried wontons are extremely popular. They are an easy finger food for parties and a snack that your kids will love. If you’re making the wrappers, try to get 60 out of the dough, or you may have a little filling left over.
Piquillo Peppers with Shiitakes and Spinach
A tapa based on piquillo peppers (see page 47), which are sold in jars and cans at specialty food stores and many supermarkets and are naturals for stuffing.
Crostini with Beans and Greens
A typical topping for crostini (and not a bad dish on its own), this hearty combination makes a great starter for a vegetarian meal. Cannellini beans are traditional here, but any white bean will work. The spread and bread may be made well in advance, but don’t combine them until just before serving.
Sautéed Spinach with Sesame
Compare this recipe, which is usually served cold as a panchan (small appetizer or side dish), with the Japanese version on page 184, and you’ll have a vision of the difference between Japanese and Korean cooking, which are closely linked and starkly different at the same time.
Spinach with Bacon
Everything tastes better with bacon, and so does spinach. The Italians often use rendered pieces of pancetta or prosciutto to flavor their vegetables, especially the winter vegetables such as chicory, kale, Savoy cabbage, cauliflower, and the like.
Eggplant Parmigiana
While the word parmigiana literally means “from Parma,” a town in northern Italy, this dish is clearly Sicilian in origin. Here you have the traditional eggplant-parmigiana recipe that everyone loves. This versatile dish can be made in advance and baked when your guests arrive. It reheats well as a leftover and makes a great sandwich as well. In Italy, sometimes it is not even baked, but assembled with sauce and a generous sprinkling of grated Grana Padano, eliminating the mozzarella, and eaten straightaway. And at Roberto’s, on Arthur Avenue in the Bronx, I found alternating layers of eggplant and zucchini—delicious.
Cannelloni
Cannelloni—that delicious stuffed pasta, literally translated as “big reeds”—is always a sign of a festive occasion in Italy. This baked dish can be made in advance and serve a large group of people, and it is loved by most. What you stuff it with almost does not matter, although a meat-and-vegetable combination is the most common choice. Cannelloni was a big-hit item on menus of Italian American restaurants in the sixties and seventies. If you have a gathering of family and friends, as Italians often do, this is a good dish to make.
Halibut with Tomato and Spinach
This dish is best when the tomatoes are fresh and ripe, but it will be almost as good with canned plum tomatoes. It makes a complete one-pot meal, including vegetables and protein. I used spinach, but escarole is a good Italian American substitute.
Poached Chicken Rolls
Poached chicken served with salsa verde or another piquant sauce is common in Italy, and this is a perfect example of cultural blending between Italian and American styles. Today in America, Chef Fortunato Nicotra often makes this dish at our restaurant Felidia. It is light and yet very tasty, especially for lunch. I like it over an arugula salad, but he serves it on top of a light fresh-tomato sauce as well. It is delicious both ways.
Veal Saltimbocca
Veal saltimbocca, which literally translates as “jumps in the mouth,” hails from Rome. It is rather simple, but simplicity is hard to achieve. In the late 1960s, when I worked in Italian restaurants to help pay for my college tuition, veal saltimbocca was always on the menu but never tasted like it did in Rome. The important flavor ingredients here are the prosciutto and the fresh sage. The early immigrants were curing hams into prosciutto at home, which eventually developed into formal businesses, such as the Volpi & Co. in St. Louis, now known as Volpi Foods. In those days, fresh herbs were hard to find—unless you were Italian and grew them at home. By the time I opened Felidia in the 1980s, fresh herbs were coming to the supermarkets, and by the 1990s, Prosciutto di Parma began crossing the ocean, so now the saltimbocca has regained its true flavors. So, unless you use fresh sage, skip it.
Fusilli with Spinach Walnut Pesto
Spinach and walnuts go well together and make a great pesto to dress pasta. This recipe is ideal for a quick meal; sometimes I like to add a few tablespoons of fresh ricotta to the pasta.
Spinach Salad
As a child, I had salads in the winter that Nonna Rosa would dress with the flavorful fat rendered from pancetta or prosciutto scraps and a splash of homemade vinegar. The greens were always the tougher winter kinds, like chicory or escarole, and sometimes she even added slices of boiled potatoes, still warm. So, when I had my first spinach salad in America dressed with warm bacon pieces, I assumed my grandma’s salad made with spinach was the American/Italian way.
Roman “Egg Drop” Soup
Stracciare means “to rip to shreds” in Italian, and, indeed, that is how this soup looks after you’ve stirred some beaten eggs with some grated cheese into a good chicken broth. Once you have a good chicken broth, the rest is easy. Stracciatella is usually served with shredded spinach and beaten egg, but I recall having it with just egg and cheese when spinach was not in season. In the Italy that I grew up in, seasons made a difference, not only in how we dressed, but in what we ate. This is a great restorative soup, served in most Italian families.
