A Green Peas Soup, Without Meat
This Mary Kettilby recipe produces a classic Potage St. Germain. The name comes from the Paris suburb of St.-Germain-en-Laye, where young peas, a rarity in the early eighteenth century, were sown in boxes for early-spring cultivation. The addition of onions and spinach provide a traditional French touch, making this soup a flavorsome beginning for spring menu.
Calendulas, also known as pot marigolds, make a lovely garnish for this soup. They were used as both a flavoring and a medicinal herb. According to one source, calendulas could be added to dishes in place of saffron, an affordable alternative in the days before saffron was grown in England. Sprinkle the shredded blossoms over the soup just before serving it. Please note that the calendula/pot marigold should not be confused with the African marigold, which is used as an insect repellent in vegetable gardens.

Popeye Pie
This pizza is one of my most popular dishes, a kind of warm spinach salad on a crust. I've been serving it since the earliest days at Sullivan Street (its origins—how I came to make it—are now lost in the mists of memory). But, even today, to the best of my knowledge, I'm the only one who offers it. Try it at home, and right after that first bite, you'll see why it's one of the most popular pies I've ever devised. When I make the Popeye in my home kitchen, I deviate from the usual system in this book and bake it (as called for here) rather than placing it under the broiler. The image of that mound of spinach directly under flame just seems wrong—I'm not even sure what would happen, but it wouldn't be good.

Spicy Baked Macaroni
When I have friends over to watch sports or an awards show, this is often on the menu. It’s comfort food with lots of colorful vegetables and a spicy kick. Make it the day before and reheat it; the flavor improves the longer it sits, which is what you want in a dish for entertaining.
Baked Gnocchi
For this dish, be sure to use the vacuum-packed type of gnocchi, not those that come hard and dry in a box, as they are full of preservatives. You can also buy fresh gnocchi at many specialty food shops, or even make your own (see page 109), though that’s not really necessary for this dish. It’s a little spin on the basic gnocchi dish that’s also a really colorful meal-in-one, packed with spinach and cheese.
Prosciutto Ravioli
This is a variation on the ricotta and spinach ravioli recipe from my first book, Everyday Italian. The original is one of my very favorite dishes, but my husband, Todd, never feels completely satisfied with a meatless meal so I came up with this version for him. The prosciutto adds body and a kick of flavor to the ravioli, making it a more substantial, manly dish.
Ribollita
Broken strands of spaghetti are the starch in my family’s version of ribollita, a thick Tuscan soup that is usually made with cubes of stale bread. We always had odds and ends of long pasta on the pantry shelves when I was a child and serving it this way made a hearty meal out of a little bit of pasta.
Sautéed Spinach with Red Onion
I make this as a side dish at least three times a week—that’s how much I love spinach, and how much I love it served this way. It’s easy, delicious, and great for you. The secret is the soy sauce; although it’s not Italian, it gives the spinach a fabulous salty kick.

Miso Soup with Tofu, Spinach, and Carrots
Be sure to purchase firm or extra-firm tofu for this soup, as it will hold up better in hot liquid than softer varieties. Miso should be added only at the end of cooking because its flavor and healthful qualities are affected when it’s boiled or exposed to prolonged high temperatures. Whisk it with a bit of liquid first so that it is quickly and evenly distributed.
Brown Rice with Tofu, Dried Mushrooms, and Baby Spinach
Brown rice is the foundation of a simple, protein-filled vegetarian dish when it’s paired with tofu. Spinach is “steamed” in the same pan for the ultimate in ease—and nutritional value.
