Coctél De Mariscos

What Mexicans call a cóctel de mariscos is similar to what most Americans think of as a mixed seafood cocktail. Every port city of Mexico, even inland Mexico City, offers them (look for a sign advertising mariscos or shellfish). Mexico has some of the freshest seafood in the world, and definitely some of the spiciest. Look for stands where you can smell the ocean and see the seafood without a blanket of sauce so you can judge freshness by color and aroma. The classic accompaniment is crispy tortilla rounds—either chipotle or corn-flavored (usually found next to the tortilla chips in a Mexican market; saltine crackers are another option). You need the crunchy texture of the fried tortilla against the softer, juicier texture of the seafood—so this works great in a crispy taco shell as I’ve done here.

Pan-Seared Scallops with Fennel Puree

Because scallops have a high moisture content, the risk in preparing them is that they will release their liquid in the pan and steam instead of sear. They also become tough and rubbery if overcooked. The trick is to heat the pan and oil sufficiently so the scallops brown quickly, without overcooking. Swirling the oil to completely coat the pan is crucial, as the heated oil will provide a slick surface that will prevent the scallops from sticking, but you should give the pan a good, strong jerk as soon as the scallops have been added, just in case. Succulent, sweet scallops have an affinity for anise-flavored fennel, and they look lovely resting on pools of silky fennel puree.

If baby beets are not available, use large beets cut into 1-inch chunks.

Once you start using the lighter, larger, crisper Japanese panko crumbs, the usual bread crumbs will feel like sand. A box of panko in the pantry crunches up all kinds of oven-fried seafood and chicken and substitutes for bread crumbs in any recipe. Their airy texture is akin to the difference between flaky kosher salt and dense iodized salt. Figure on about three large scallops per person.

Taylor Bay Scallops are named for fisherman Rod Taylor, who farm-raises them and harvests them by hand in the icy waters off Cape Cod. Unlike diver scallops, which are larger and have a meaty texture, the small, delicate Taylor Bays are sold live in their beautiful pink shells. Their size and sweetness make them perfect for steaming, which releases the juices trapped in the scallop shells, giving an oceany, scallopy flavor to the broth.

Smorgasbord

We never went hungry as kids. And we have no inherent fear of the next Great Depression or anxiety about canned food. Still, we always want more. Wanting and eating four of the Swedish shrimp-egg things you can buy in the restaurant at IKEA is a good example of that. Another good example is how we would have piled more stuff on this modest toast if we could have fit it: a can of sardines from Bretagne, maybe, or quails stuffed with crab hiding in the corner. Our first reaction on seeing this photo was, “Shit, we forgot clams.” There are thirty items here, and if we do another book, we will put in sixty, we promise (just so we don’t run out of food). Disclaimer: In no way do we aspire or pretend to serve authentic Scandinavian food. This is just our view projected onto a classic. The closest we have been to Scandinavia is Fred Heimlich-maneuvering a Dane who choked on the biggest oyster ever eaten raw. And it was a weird experience because it was like they kissed; they were shy around each other for the rest of the evening. In the list that follows, an asterisk means a recipe is included. If there’s no *, it means the item is straightforward and you can figure it out. We suggest serving the items on rye bread or a baguette sliced lengthwise and buttered. You then eat your open-faced sandwich with a fork and knife. Or, you can do as we do: add condiments and eat it like a military strategist, portioning, placing, moving, and rationing. Regarding yields: the smorgasbord is more of a concept than a straightforward recipe. The smorgasbord shown here serves 4 to 6, and includes every single thing listed. You don’t have to follow our lead (though we would be pleased). Typically we put 4 or 5 proteins and 4 or 5 condiments on the average smorgasbord. Following this rule, each of the small recipes serves four.
