Salmon with Breadcrumb, Olive and Sun-Dried Tomato Crust
"Dinner at the Montauk Seafood Grill was an ideal way to cap off a day of skiing in Vail," Julie Harris of Redwood City, California. "The salmon covered with an unusual breadcrumb coating is something I would like to make for a dinner party."
Cornish Game Hens with Garlic and Rosemary
The fragrant roasted birds are served with a pan sauce containing whole garlic cloves. Accompany the hens with a crusty garlic bread to mop up the sauce, and pour a light Chianti throughout the meal.

Grilled Butterflied Leg of Lamb with Lemon, Herbs, and Garlic
This recipe can be prepared in 45 minutes or less but requires additional sitting time.
Butterflied leg of lamb can sometimes get a little unwieldy. To secure loose flaps of meat, run 2 long metal skewers lengthwise and 2 skewers crosswise through the lamb, bunching the meat together. Securing the lamb this way will also help it cook more evenly.
Tomato Soup with Lemon-Rosemary Cream
Here's the real thing — far more vividly colored, textured and flavored than the stuff that comes out of a can, and far more comforting. A drizzle of lemon-rosemary cream gives this classic American soup an Italian touch.
Bacon-Wrapped Shrimp with Rosemary and Stilton
"The recipes here reflect my British roots, but not necessarily my family traditions," writes Mairi Morrison of London, England. "Although my mother is from Scotland and my father is from Northern Ireland, I grew up in Los Angeles, where our weeknight meals were typically American: spaghetti, tacos, and burgers. It wasn't until I moved to Europe that I became really interested in food. Here in London my social life is centered around the table.
I really like this dish because it is typically British, and perfect for a rainy winter evening in London."
Since these hors d'oeuvres can be assembled ahead, they're good for a cocktail party.
Baked Herb-Crusted Chicken Breasts
Tenderize the boneless chicken breast halves by flattening them as you would for a chicken piccata, then marinating in lemon juice. What to drink: A crisp Sauvignon Blanc is ideal with both the breaded chicken and the asparagus risotto.
Herb-Crusted Grilled Lamb with Apricot Relish
The lamb top roast is one of the three "subprimal" cuts that can be cut from the leg of lamb. The equivalent of the beef top round roast, but smaller and more tender, it provides a succulent boneless lamb roast when you don't want to deal with a whole leg.

Roast Turkey with Herb Butter and Caramelized Onion-Balsamic Gravy
The gravy can be started while the turkey roasts. When the turkey is through cooking, finish the gravy with balsamic vinegar and the pan juices.

Roasted Sweet Potatoes and Onions with Rosemary and Parmesan
An inspired mix of ingredients in a savory sweet potato dish. This can be prepared four hours ahead and rewarmed in the oven 10 minutes before serving.
Fish Marinated with Vinegar, Sweet Wine, Tomato, and Rosemary
Ideally, the sweet wine in the marinade should be Muscat, a famous Samos wine.
Contemporary Cassoulet
Make this at least one day and up to two days ahead for best flavor. This is a much simplified version of the classic smoked meat and bean cassoulet.
