El Olivo is one of three restaurants located in La Residencia, a beautiful resort in the western Majorca town of Deià.
Serve this refined Spanish dish as they do at the restaurant, with sautéed purple potatoes, mushrooms, baby carrots, and broccoli.

Grilled Fontina and Caponata Panini
Fontina cheese and caponata (a chunky Sicilian eggplant relish available in cans or jars at most supermarkets) make a substantial sandwich. Have pasta salad as well; grapes and assorted bakery cookies complete the dinner.

Simmering the yams fills them with flavor and yields a lovely coating.
Rosemary Garlic Red-Wine Vinegar
Flavored vinegars can be used to enliven dressings and marinades, finish pan sauces, or pickle vegetables--and they make wonderful gifts. Once the steeping is completed, these vinegars keep for several months. (Garnishes and other solids left in the jar, however, may discolor or break down.)
Brined Pork Loin with Onion, Raisin, and Garlic Compote
Brining results in moist, tender meat. Be sure to use a large center-cut loin, which cooks more evenly than two smaller pieces tied together. Begin this recipe one day ahead. What to drink: A medium-bodied fruity red, such as Merlot, or a fruity white, such as Australian Sémillon.
Country Sausage
You can fry this sausage in patties, stuff it into casings, or use it as an ingredient in other recipes that call for sausage. I use it in stuffings, in biscuits, smoked in links for gumbos, and as a breakfast meat. Use the recipe as a guide only. The wonderful thing about making your own sausage is that you can season it to taste.

Roast Leg of Lamb with Rosemary and Garlic

Roasted meats are simple by definition, and in Tuscany they are not just simple, but pure and filled with flavor, too. Lamb is one of the Tuscans' favorite meats to roast. The seasonings in this recipe reflect the Tuscan countryside, with its wild rosemary and the aroma of garlic in the air. Though garlic is ever-present in the cooking, it is generally used in moderation so that it doesn't overpower the other flavors.
