Turkey Breast Steaks, Prune Gravy, Red Cabbage

As cuts of meat go, the turkey breast steak is a relatively new one and will please those who like their protein neat, mild, and fat free. This addition to the meat counter has its advantages for a quick supper. It can be sizzled in butter with a few aromatics (bay, black pepper, thyme sprigs, and a curl of orange rind tend to cheer it up). Turkey still reeks of Christmas, but the white meat less so than the legs, which always smell like a roasting Christmas lunch. Red cabbage makes a satisfactory accompaniment. Go further, with a few prunes and a bottle of Marsala, and you have something approaching a joyful Sunday lunch, though without a bone to pick.

Bittersweet Chocolate Cake with Prune Purée and Hazelnuts

After my company catered a party spotlighting foods from the state of Oregon, we were left with several pounds of fresh hazelnuts from the Willamette Valley, the capital of U.S. hazelnut production. We added the nuts to a flourless chocolate cake, and the result was this dark, rich confection with fruity undertones. Maple sugar, which is simply dehydrated maple syrup, is sold at most health food stores, but you may substitute any dry sugar. Serve this cake with vanilla-spiked whipped cream.

Pork Chops with Dried Plums

Doesn’t the phrase “dried plums” sound much more appealing than “prunes”? The slightly sweet flavor of the pork combines nicely with tender, fruity dried plums and is based on a classic French combination. This recipe calls for pork chops on the bone. When you cook meat on the bone, the bone essentially becomes a heat conductor. The meat cooks more evenly and tender with less loss of juices. Serve these chops with quick-cooking polenta for a delicious meal in minutes.

Prune-Armagnac Ice Cream

One winter I visited my friend Kate Hill, who lives in Gascony, a region famous for its tasty prunes, les pruneaux d’Agen. As a means of prying me away from the cozy kitchen hearth, where I could happily eat cassoulet and drink Armagnac all day by the fire, we decided to do something cultural and visit the local prune museum. It was all rather exciting: an entire museum full of educational displays on the history of prunes, including informative dioramas showing the various phases of prune production. We ended our visit with a thrilling film explaining prune cultivation and harvesting, which was a real nail-biter. On our way out, near the prune-filled gift shop (there was a comic book about a prune-fueled superhero…I’m not kidding), was a shrine with a jar holding what they claimed was the world’s oldest prune, dating back to the mid-1800s. For this recipe, you should use prunes that are wrinkled but not necessarily that old, and be alert that it’s become au courant to call them dried plums in America.

Prune Armagnac Truffles

This is an all-time favorite recipe from my cooking classes. A trip to Paris inspired me to experiment more with prunes, and chocolate seemed like the perfect pairing. I think a good PR person could do a world of good for prunes! In spite of their somewhat dowdy reputation, prunes have a sophisticated taste that makes them an interesting recipe ingredient.

Dried Fruit Compote

This is an absolute go-to dish for people taking pain medication. Why? Because many pain meds, especially opiates, can stop up the works, if you get my meaning. This isn’t your typical fiber-laden, tasteless concoction. (Can you say bran muffin?) In addition to prunes, the traditional remedy, this compote also includes dried apricots and cherries, and we’ve also brought ginger and cardomom to the party. The result is a delicious compote that smells incredible while it’s cooking and goes great over oatmeal or on toast. For those days when you need a kick start, this blend will nudge you in the right direction. Believe me, it works. Before cooking the compote, it’s best to soak the fruit for a few hours, or preferably overnight, so plan ahead. This is great served warm or at room temperature.

Chicken Marbella

This was a popular and exotic dinner party recipe in the “mod” 1960s. My mother-in-law made the traditional version for us recently, and though my husband typically doesn’t like fruit with meat, even he licked his plate clean! I cut the amount of brown sugar called for in the original version immensely because I feel the prunes add a lot of sweetness. You could even omit the sugar entirely and still enjoy a sweet-tasting meal.

Roasted Pork Loin with Prunes, Dandelion Greens, and Mustard

This is a great sandwich to make with leftovers (in this case, leftover pork loin). One of the key elements in this sandwich is the choice of greens. Dandelion greens are bitter, but balance the other flavors of prunes and mustard. If the greens are not to your liking, either try buying smaller-leafed dandelion greens (the larger the leaf, the more pronouncedly bitter) or substitute mustard greens or endive.

Pumpkin–Pine Nut Cake

Pumpkins and pine nuts are in the same boat in that both are easily influenced by other ingredients. I felt they needed each other in this dessert, which I created particularly for this book. In addition to flavor, the pine nuts provide structure in the cake and texture in the streusel.

Chicken with Mole Negro Sauce

Authentic, fiery mole sauces from the southern region of Mexico take days to prepare. This is a relatively quick version of the chunky, spicy, and chocolatey, mole negro or “black sauce.” To experience the full flavors of peppers, native spices, and fresh chocolate, book a culinary vacation to Oaxaca, Mexico, the Land of Seven Moles, where you can explore a district known as the Trail of Chocolate. In the meantime, get fresh ingredients from your local farmers’ market. You can substitute jalepeños for the poblano chiles, but the dark dried ancho and mulato chiles are important to bring the sauce to its characteristic deep chocolate brown. This will make a large batch of sauce designed to thin and use for a meal, then freeze and thaw as needed.

Sugarplum Sauce

Sugarplums, made famous by the “Dance of the Sugarplum Fairy” in Tchaikovsky’s ballet, The Nutcracker Suite, is an old-fashioned English word for candy. It evokes the sweet glory of a dried plum, also known as a prune. Lately, body-cleansing properties of prunes have made them embarrassing. But so what if they are healthy? They are also beautifully sweet like candy, full of wrinkle-fighting antioxidants, and charged with fiber and vitamins. In this recipe, with an assist from dark chocolate, prunes regain their rightful place as sugarplums. This sauce makes a fine duet with ice cream or a slice of pound cake (see Breakfast-in-Bed Pound Cake, page 26).

Sweet Prune and Sage Pork Chops with Potatoes

Serve with steamed green beans or broccoli, your choice, if you want to include a veggie on the menu.

Sweet and Sour Eggplant

We love the complex flavors of this puree. We like to serve it with the Twice-Cooked Scallops (page 25). It also goes well with salmon, turkey, corned beef, and the Root Beer–Braised Short Ribs (page 226). The smokiness gives the mixture a rich meaty taste and enhances the sweetness of the dried fruits. Rest assured, though—even if you don’t have smoked fruits, you can use the regular dried version and still enjoy something special.

Compote de Pruneaux et de Figues

In the early twentieth century, a Jewish woman named Geneviève Halévy Bizet, the mother of Marcel Proust’s friend Jacques, held one of the most popular women’s salons in Paris, depicted in Proust’s work. Gertrude Stein, the Jewish writer, along with her partner, Alice B. Toklas, hosted another famous salon, conversing with and cooking for writers and artists during the many years when they lived together in France. One of the recipes Alice liked to serve to their guests was very similar to this prune-and-fig compote. In Alsace and southern Germany, prune compote is eaten at Passover with crispy sweet chremslach, doughnutlike fritters made from matzo meal (there is a recipe for them in my book Jewish Cooking in America).

Marrons aux Oignons et aux Quetsches

Winter in France means chestnuts, particularly roasted in a long-handled frying pan in the coals. Ever since my mother introduced me to the nuts as a child, they have had a special place in my heart. This winter melding of chestnuts, onions, and prunes is a common Alsatian dish. You can add celeriac to the delicious mix, or, if you like it a little sour, increase the vinegar or lemon juice.

Reisfloimes

This old Alsatian dish of rice and fruit sautéed in veal fat is typical of so many simple, seasonal recipes. It is adapted from La Cuisine Juive en Alsace by Freddy Raphaël. The dried fruit, mixed with an onion and sautéed in a little veal fat with prunes and raisins, transforms the rice into a magnificent dish. I have substituted vegetable oil for the suggested veal fat, and I usually serve this rice dish alongside a meat dish.

Alsatian Pear Kugel with Prunes

Bosc pears and Italian blue plums (dried for use in the winter) are fruits that were most often put into kugel. This very old Alsatian Sabbath kugel uses leftover bread that is soaked in water, squeezed to remove any excess moisture, and then mixed with the dried or fresh fruit and left to stew in the oven overnight. Some, like this version, include onions, which add a savory dimension to the sweetness of the fruit and the dough. I love this dish, which I serve in my home for Rosh Hashanah and the Sabbath as a side dish with brisket.
