Prosciutto

Prosciutto-Artichoke Sandwiches with Rosemary Mayonnaise

If you prefer to serve prosciutto without the mayonnaise, the spread here can be replaced by tomato slices sprinkled with a little chopped rosemary.

Prosciutto Rolls with Arugula and Figs

Prosciutto slices are usually paper-thin-but for this dish be sure they are not too thin or they will tear when you spread the cheese on them. Serve these with the Black Pepper Almonds, and pour Champagne.

Asparagus and Prosciutto Bundles

Slices of prosciutto spread with goat cheese and wrapped around asparagus tips make terrific cocktail party fare. The leftover asparagus stalks can be cut up and used in soup, or toss them with pasta, olive oil and Parmesan cheese.

Salad of Grilled Asparagus with Taleggio Cheese and Serrano Ham

In this dish from La Belle Vie in Stillwater, Minnesota, the asparagus could be broiled if that's more convenient.

Roasted Asparagus Bundles

This is a quick, attractive dish, terrific with softly fried eggs for a spring weekend breakfast, as an appetizer for lunch or dinner, or as a side vegetable with roast chicken.

Veal Scaloppine Saltimbocca

Joan Macht of Manistee, Michigan, writes: "My wedding shower was held at the Blue Slipper Bistro in Onekama, Michigan. For dinner I had the veal scaloppine saltimbocca, and now I want to make it for my new husband. Will you ask owner Cheryl Kissel for the recipe? The word saltimbocca in this classic Italian recipe means "jumps in your mouth," because of the great combination of flavors. The addition of herbes de Provence gives this version a bit of a French accent.

Chicken Breast Valdostana with Braised Lentils

Petto di Pollo alla Valdostana con Lenticchie Brasate I sometimes suggest some side dishes to go along with main courses and let you make up your mind which you prefer to serve. I love this combination so much, though, that I'm including the side dish as part of the recipe. I hope you enjoy it as much as I do.

Prosciutto-Wrapped Figs with Gorgonzola and Walnuts

If fresh figs aren't available, dried black Mission figs can be substituted here; look for ones that are soft and moist. What to drink: Crisp Pinot Grigio pairs nicely with the entire meal.

Prosciutto, Mozzarella, Tomato, and Basil Panini

Tracey Medeiros of Atlanta, Georgia, writes: "I'm a food stylist and recipe developer — and passionate about my job. It was a dream of mine to have a career in the culinary arts, but I didn't think that was possible. In college I was a political science major and considered going to law school. But soon after graduation I realized cooking was my true calling." Italian-inspired sandwiches hot off the grill.

Scrambled Eggs with Chive Pesto and Prosciutto

Leftover pesto is great with fish.

Morel-Crusted Ribs with Polenta

The ribs can be braised one day ahead and topped with the breadcrumb mixture shortly before serving. What to drink: Robust Pinot Noirs with firm acid (to cut the richness of this dish), such as French Burgundies from Volnay, and Oregon or California Pinots.

Prosciutto and Gruyère Pastry Pinwheels

The perfect appetizer with Champagne.

Pizza Bianca with Prosciutto, Arugula, and Parmesan

Called bianca, or "white," because they are sauceless, these crispy pizzas are the essence of clean flavor. The toppings are added after the crusts come out of the oven, melting the cheese slightly. This recipe makes two round pizzas or four rectangular ones.

Asparagus and Serrano Ham Salad with Toasted Almonds

(Amanida amb Epàrrec i Pernil) A Catalan composed salad, or amanida, may be made of almost anything, though ham, sausage, or anchovies are often included. Traditionally, the ingredients are added to the final presentation individually rather than mixed together. Active time: 15 min Start to finish: 15 min

Antipasto Salad with Basil Dressing

Roasted bell peppers, prosciutto, and olives are added to the classic Italian trio of tomatoes, mozzarella, and basil. Serve with plenty of crusty country bread.

Fennel, Prosciutto and Pine Nut Stuffing

Italian flavors accent this innovative stuffing. We suggest making it with the Roast Turkey with Red Currant Jelly and Citrus Glaze; reserve the fennel stalks and fronds for use in the stock that's needed for the gravy.

Penne with Basil and Prosciutto

This recipe can be prepared in 45 minutes or less.
