Citrus-Sage Roast Turkey with Gravy: Large Crowd
Sage is to turkey what cinnamon is to apples; they go together like bread and butter. The seasoned butter on this bird is a bright and herbal mix of chopped sage leaves and fresh orange and lemon zest, which bathes the breast with the essence of the Thanksgiving aroma.
For the all-important gravy, we offer two homemade options for stock, as well as store-bought chicken broth. We can't rave enough about the gravy made from the brown turkey stock. Trust us when we say it produces the most soul-satisfying sauce, and because it's not dependent on the giblets from your turkey, it can be made weeks ahead and frozen.
If you're hosting a smaller group for Thanksgiving this year, such as a group of four, or perhaps even just the two of you, we suggest forgoing the whole bird for a turkey breast with the same prep.

Basic but brilliant is an apt description for this never-fail Thanksgiving turkey from acclaimed restaurant-owner and Top Chef judge Tom Colicchio. His secret is to use a moisture-ensuring butter that is rubbed under the turkey skin; Tom’s is speckled with rosemary, sage, tarragon, and thyme, but use herbs of your choosing to put a personal stamp on this dynamite bird. With its simple and traditional flavor notes, this turkey can be paired with a variety of stuffings, though we’re partial to our New England Sausage, Apple, and Dried Cranberry Stuffing (page 262).
Chicken Chili
A blender and a saucepan are all you’ll need to cook this peanut-thickened chili. In authentic Mexican fashion, the nuts, along with the dried chiles, garlic, cilantro, and cumin, are blended with tomatoes and chicken broth to create an earthy, spicy stew base. Pulled rotisserie chicken—a brilliant time-saver—and fiber-rich beans complete the magic. To turn this into a “meatless Monday” meal, replace the chicken with another can of beans and use a good-quality veggie broth. And always remember to wear gloves while handling chiles.
Chicken and Fall Vegetable Pot Pie
Transform plain chicken breasts into a new feast with this succulent take on the pot pie. Make the filling the night before, then get to work on the aromatic herb crust, stuffed with thyme and butter. The pie demands a fair amount of preparation, but efforts will be rewarded with high praise. Halve the measurements for a weeknight dinner for the kids, or make the whole recipe to serve a crowd of eager guests. And feel free to throw in whatever produce you have on hand.
Vietnamese Chicken
This unbelievable stir-fry is a cut way above your average one-wok wonder. Epicurious member Thomas Spears of Worcester, Massachusetts, puts his own spin on a classic combination of Southeast Asian flavors—lemongrass, turmeric, and fish sauce—with the richness of caramelized sugar. Feel free to temper the heat by using fewer Thai chiles. The quality of the fish sauce makes all the difference here. Spears notes, “I prefer the brand Thanh Ha Chanh Hieu Phu Quoc nuoc mam, based on its lower salt content and what I believe to have great flavor.” Another tip: when slicing the lemongrass, flatten it with the back of your knife to release some extra flavor.
Bourbon Chicken Liver Pâté
Bourbon puts a distinctively American spin on this classic French hors d’oeuvre. The booze also helps balance the rich and unctuous chicken livers, which are sautéed in a heady mix of onion, garlic, and herbs. While it needs to be chilled only for two hours before you can dig in, wait a day or two and you’ll give the flavors a chance to really develop. For holiday celebrations, serve this pâté in a terrine. Alternatively, divide it among ramekins to create unique and indulgent hostess gifts.
Spaghetti with Turkey-Pesto Meatballs
In addition to being packed with meaty flavor, turkey is a healthy alternative to beef, rendering this a great dinner option for the whole family; to really save on fat and calories, stick to lean ground turkey. Pair this dish with a green salad and red wine, then finish off the meal with bowls of your favorite ice cream.
Turkey Jambalaya
A satisfying budget-friendly Southern supper with leftovers that pack up easily for lunch the next day—what else could you ask for? This one-pot feast is packed with turkey, rice, and peppers, plus a little cayenne for spice. If you don’t like turkey, use chicken instead and add a dash of smoked paprika or lean bacon for a warm, earthy effect.
Mahogany Chicken
This sweet, sour, and salty chicken gets its name from the rich, dark soy sauce. It’s quick to prepare, and the one-pan prep makes it easy to clean up. “Using a splatter screen (or a large, inverted strainer/colander) is helpful for reducing the mess when browning the chicken,” says Epicurious member Joy Vaughns. Serve the chicken with steamed rice and a crunchy green vegetable.

In this comforting chowder, heavy cream, flour, and potatoes provide rich, velvety texture, while the smoky flavor of chipotle chile in adobo sauce adds heat. The recipe calls for about a pound of smoked chicken, which is available at some butcher shops and specialty food stores, but you can also use (unsmoked) chicken breasts.
