King Oyster Mushrooms with Pistachio Purée
Chefs will tell you that sometimes inspiration comes from the exalted—but just as often by chance. "I was shopping for porcini mushrooms at a restaurant-supply store and saw a bag of king oyster mushrooms sitting next to a package of some amazing pistachios," says Chang, though this sophisticated dish would never give away its accidental origins.

Apricots, Yogurt, and Honey
Offering a good dose of calcium, zinc, and vitamins A and C, this Middle Eastern-inspired combination makes a healthy handheld breakfast or snack. Topped with honey, nuts, and yogurt as thick as ice cream, it might even pass for dessert.

This recipe makes plenty of cookies, so bundle up extras (with green ribbon, of course) to send home with guests.

Matzoh Baklava
Editor's note: This recipe was created by chef Einat Admony for an Israeli Passover menu.
This is one of those desserts that magically improves as it sits — you could serve it after one day, but it's even better on the third day, as the matzoh soaks up the lemony syrup. To avoid a cloying rose flavor, be sure to use rose water (available at Middle Eastern markets and adrianascaravan.com), not rose syrup.

Tex-Mex Chex
Editor's note: The recipe and introductory text below are from White House Chef: Eleven Years, Two Presidents, One Kitchen by Walter Scheib and Andrew Friedman.
This is the snack mix President Bush brought with him from the Texas Governor's mansion. It's a Texas twist on an old American favorite, and we had to have it on hand at all times. In addition to eating it at the White House, the President never traveled without it.

Chicken Breasts with Pistachio-Cilantro Pesto
An unusual pesto made from pistachios and cilantro gives the chicken Middle Eastern flavor.
Pistachio-Crusted Halibut with Spicy Yogurt
After he went on the Blue Voyage, Boston chef Chris Schlesinger came up with the idea for this recipe, which brings together many of the characteristic flavors of Turkey's Mediterranean coast. Halibut works best, but you can use any mild, firm-fleshed white fish.

Pistachio Cranberry Icebox Cookies
With their ruby cranberries and glittering sugar edges, these cookies look labor-intensive. But they're actually a host's best friend — keep the dough in your fridge, and they can be baked and served in half an hour.
Chocolate-Pistachio Torte with Warm Chocolate Ganache
There will be a bit of pistachio paste left over: stir it into your next batch of brownies.
