Amazing Chocolate Chip–Peanut Butter Cookies

Crisp on the outside and gooey on the inside, these irresistible cookies get extra crunch from dry-roasted peanuts. The recipe, from Epicurious member Ashlee L. Galletta of Winnipeg, Canada, was inspired by Reese’s Peanut Butter Cups, so get ready for a heady dose of peanuts balanced by creamy milk chocolate. If you prefer your cookies a little less sweet, skim a couple of tablespoons of sugar from the recipe and swap in semisweet chocolate chips for the milk chocolate ones.

Chicken Chili

A blender and a saucepan are all you’ll need to cook this peanut-thickened chili. In authentic Mexican fashion, the nuts, along with the dried chiles, garlic, cilantro, and cumin, are blended with tomatoes and chicken broth to create an earthy, spicy stew base. Pulled rotisserie chicken—a brilliant time-saver—and fiber-rich beans complete the magic. To turn this into a “meatless Monday” meal, replace the chicken with another can of beans and use a good-quality veggie broth. And always remember to wear gloves while handling chiles.

Peanut Butter and Fudge Brownies with Salted Peanuts

A much-loved brainchild of the legendary cookbook author Dorie Greenspan, this recipe features a dense, peanut-studded cake topped with a creamy layer of peanut butter, which is in turn topped with a thick, rich ganache. The recipe yields 30 pieces, but you can cut the brownies into even smaller squares for larger parties.

If peanuts aren’t enough protein for you, add some seared Ahi tuna or grilled sliced chicken to bulk it up.

Sweet, Tart, and Spicy Shrimp and Cucumber Salad

This healthy sprightly salad has a distinctly Asian kick to it. One of the best things about it is you can add just about any veggies you have—just be sure to cut them up into bite-size pieces. The dressing also makes a terrific marinade for fish or chicken.

Burmese Gin Thoke Melon Salad

If it's melon season, you have to make this. In Burma (Myanmar), gin thoke, meaning "ginger mix," is a blend of crispy fried garlic, sesame seeds, and ginger, and is eaten as a sweet digestive snack after meals. Although not native to the region, melons are a refreshing and delicious complement to this dressing, together making a perfect summertime side dish. The ginger is key to this salad. Ideally, the gingerroot should be so young that the skin is almost transparent and the roots are tipped with pink.

Frozen Chocolate-Dipped Bananas with Peanut Brittle

When frozen, bananas become so creamy they can almost pass for sorbet or even ice cream. Coat them with chocolate and sprinkle them with homemade peanut brittle—there will be plenty left over for snacking—and you've got a refreshingly cold treat that feels almost as virtuous as a serving of fruit. Basic Drop Cookies

Everyone needs one reliable recipe for an old-fashioned drop cookie. This master recipe fills the bill. It’s simple (no machines necessary—the butter can be creamed by hand, though you can use a mixer for ease) and infinitely variable (modify the dough with any of the add-ins listed below, or split it into two or three batches so that you can make more than one type of cookie at the same time). And if you want, you can bake a portion of it, then form the remainder into balls (on baking sheets) and place in freezer until frozen. Store the frozen balls of dough in a resealable bag in the freezer until until you’re ready to bake; let sit at room temperature for 30 minutes before baking, and bake a few minutes longer than the recommended time. These cookies are somewhat cakey; for a chewier texture, reduce the flour by 1/2 cup and the baking time by 2 minutes.

Caramel Coppetta with Marshmallow Sauce and Salted Spanish Peanuts

Every restaurant menu has at least one or two items that can’t be taken off lest customers riot. This sundae and the Butterscotch Budino (page 272) are those items for us, which just goes to prove that caramel and salt are a winning combination. In Italy, coppetta refers to an unadorned dish of gelato, but we took liberties with the definition with this sundae. It’s a good dessert to serve to a crowd, since the recipes for the caramel, marshmallow sauce, and gelato make enough for twelve or more. To increase the yield, just increase the amount of peanuts that you toast.
