Beer-Barbecued Brisket

In the cattle-ranching heartlands of Texas, barbecue usually means beef, not pig, and brisket—which comes from the animal’s lower chest—is hands down the most popular. A little patience and a few hours of smoking or braising transform this relatively tough cut into the most succulent, falling-apart-tender meat you’ll ever eat. Part of the trick is marinating the meat for several hours or even overnight prior to cooking, so be sure to factor in this additional “inactive” prep time. To avoid standing over the grill for six to eight hours, I start the meat on the grill for an infusion of smoky hickory flavor and then let the oven do the rest of the work.

Classic N’Awlins Remoulade

There are two versions of remoulade. French remoulade means celery root remoulade, a beloved bistro slaw bound in a creamy white mustard-mayo dressing. But in New Orleans, classic remoulade is red and more of a vinaigrette, made with two traditional spices, paprika and cayenne, and balanced with plenty of celery and parsley that provide a fresh, clean crunch. This remoulade is my favorite way to eat chilled, boiled shrimp, crab, or crayfish, but the dressing is also great on crabmeat or on a simple boiled egg, sliced in half and served atop crisp shredded lettuce.

Spanish-Style Shrimp with Smoked Paprika and Basil

This recipe is based on the much-loved Spanish dish called Gambas al Ajillo, or shrimp with garlic. The basil is not a traditional ingredient, but I like how its fresh flavor pairs with the sweet, garlicky shrimp. Smoked Spanish paprika, or pimentón, has a unique flavor and is well worth tracking down. You can find it at most specialty food stores, or in Latin markets. It’s typically much cheaper at the latter.

Blackened Roasted Prime Rib

Look no further for your next special-occasion meal, because this is it. Also known as a standing rib roast, this cut—tender, juicy, and loaded with flavor—is the king of beef. And as long as we’re celebrating, this dish is pushed to its over-the-top status by the accompanying béarnaise butter. This deceptively simple compound butter with shallots, tarragon, and a bit of tangy vinegar delivers the delicately herbal, luscious taste of a rich béarnaise sauce without the hassle and heaviness of its hollandaise base. The only thing I find lacking in most prime rib dishes is that crusty exterior I love, but I’ve taken care of that by borrowing a technique from my friends in Louisiana—blackening. It encrusts the luscious meat in an extra layer of flavor and texture.

Barbecued Potato Chips

We serve these chips, an all-American classic, with our Lobster Club (page 50) for lunch at Bar Americain, but you could serve them with any sandwich—or just sit in front of the TV and eat a big bowl of them on their own. Making your own potato chips and seasoning does require a little work, but the end result is definitely worth it. That said, if you don’t want to make homemade potato chips, you can substitute your favorite brand of plain potato chips, spread them in an even layer on a baking sheet, and heat in a 325°F oven for 5 minutes before tossing them in the barbecue seasoning.

Brooklyn Hash Browns

You could certainly serve these hash browns with eggs, but I didn’t find the inspiration for this dish at my local diner. These belong right next to a juicy steak. I mix sweet caramelized onions with cooked potatoes seasoned with smoky paprika. Cooked in butter and oil, the bottom layer of potatoes becomes amazingly crisp and is browned to perfection. Serve this bottom side up so that everyone can see what crispy potato goodness awaits.

Blackened Sea Scallops

The legendary Louisiana chef Paul Prudhomme started the blackening craze; the method calls for coating seafood or meat in a spice mixture before cooking it in a cast-iron pan. The quick cooking over high heat really seals in flavor as it creates a fantastically flavored blackened crust. Redfish is the traditional choice, but I like the juxtaposition of the spicy rub against the sweetness of scallops. Their meaty richness really holds up well to the aggressive blackening. A simple vinaigrette of green onions adds a vibrant freshness to the dish, as does the smoky tomato relish.

Sangrita

Sangrita is actually a spicy cocktail mixer meant to be sipped alternately with shots of tequila. However, it can also make a perfect nonalcoholic option to serve at brunch or as an aperitif. Fresh citrus juice adds a bright note, while the guajillo chile and smoked paprika add earthiness (and, of course, smokiness). Caramelizing the onion instead of adding it raw mellows out the flavor and adds a touch of sweetness.

Barbecue Cocktail

Given my love of grilling and barbecue, this drink was inevitable. Smoky paprika, savory tomato juice, and vodka with a spicy kick meet dry vermouth and tangy lime juice in this cocktail that’s perfect with burgers, steaks, fish tacos (page 107), and, well, almost anything barbecued.

Pickled Mary

The Bloody Mary is probably the most popular brunch cocktail in the United States and with good reason; spiced-up tomato juice and vodka garnished with a stalk of celery—the classic version—is a perfect weekend pick-me-up. There are many variations of the Bloody Mary that contain everything from beer to beef bouillon. My version has a southwestern theme, where roasted tomatillo sauce—spiked with vinegar and pickled horseradish—joins tomato juice to give the drink great body while adding a slightly tart, slightly smoky flavor.
