Stewed Lamb Shanks with Mushrooms and Pasilla Chile Sauce

This dish is all about patience; the chile sauce takes just a few minutes to prepare and can be done while the lamb shanks are browning. But after combining the two with the mushrooms you must wait, sometimes for a few hours, for the shanks to become completely tender. Once that’s done, you can eat the meat with a rice dish (try Arroz a la Mexicana, for example, on page 517), or use it as a filling for tacos. Ideally, you’d use wild mushrooms here—I once made it with chanterelles, and the combination was magical—but fresh shiitakes are also great. Other cuts of meat you can use here: short ribs (which will also take a long time); chunks of lamb or pork shoulder (which will be faster) or beef chuck or brisket; bone-in chicken parts (which will be much quicker), preferably thighs.

Recado Rojo

Classically used for Cochinita Pibil (page 351), this gorgeous, bright red paste can be smeared on any meat you’re about to roast or grill. Its color belies its flavor, which is not at all hot (though you can throw a chile in there if you like). Annatto—or achiote—is something you’ve probably encountered unknowingly, since it colors processed cheeses, margarine, and lipstick. The triangular, brick-colored seeds of the annatto tree have been especially important in the Yucatán peninsula and South and Central America for centuries; make sure the seeds you buy are bright red, smell earthy or musky, and taste slightly peppery. Whole seeds keep for a year or more in a tightly covered container.

Adobo

Adobo is an oregano-based spice mixture that, when purchased in stores, is usually made from dried ingredients—dried oregano, onion powder, and garlic powder. This fresh version is infinitely better; use it as a rub for pork, chicken, or beef.

Baked Stellar Bay Kusshi Oysters with Garlic Breadcrumbs and Oregano

I love broiling Kusshis not only because they have a lovely, delicate texture and a good brininess, but also because they have deeply cupped shells that hold both liquid and a lot of delicious breadcrumbs. Cherrystone clams would be a great substitute, and Totten Virginica, Barron Point, or Shigoku oysters would also work well, because they are the right size to hold up to the heat. Save tiny Kumomotos for eating on the half shell.

Mixed Bean Salad with Herb Vinaigrette

Allowing the farmer’s market to determine the mix of beans in this filling salad gives new meaning to the traditional “three-bean salad.” Fresh beans are always a treat, but I make this dish year-round by using canned navy, garbanzo, or cannellini beans when fresh ones aren’t available. If using canned beans, just skip the blanching step and toss the beans with the herb vinaigrette.

Salsa Verde

Fresh herbs give these sauces bright flavors. Use them to top grilled meats or steamed vegetables. They also make fantastic sandwich spreads.

Provençal Lamb Chops

Lamb rib chops have a dandy handle (the rib bone), and are excellent served as lamb “lollipops” for delicious, but rather extravagant, hors d’oeuvres. As the ribs get closer to the neck and shoulder, the nugget of meat becomes smaller, perfect for hors d’oeuvres. The larger ones are best as a main course served with a knife and a fork. Loin lamb chops are cut from the loin and look more like miniature T-bone steaks, with a bit of the loin and tenderloin on either side, and take a little longer to cook, but may be substituted in this recipe.

Achiote Marinade (Recado)

It’s hard to put my finger on what it is about this marinade that makes it so good. It could be the earthiness of the annatto seeds, but it could also be the sweet tanginess from the vinegar, cumin, and orange juice. Whatever it is, you will love it on your chicken, fish, or pork, as much for its flavor as for the striking deep red color it will pass on.

Sopa de Ajo

There is a Mexican restaurant in my town that specializes in caldos, or Mexican broth-based soups like this sopa de ajo. Everyone goes there to get take-out caldo when they feel a cold or flu coming on, but most of the time, everyone goes there just because they like caldo!

Cheese and Herb Corn Muffins

Moist and flavorful, these muffins pair nicely with bean soups. Try them with Long-Simmering Black Bean Soup (page 38).

Pasta Primavera

Primavera means “spring” in Italian. Pasta Primavera is a wonderfully colorful, light, and healthy meal filled with springtime vegetables. Almost any vegetable will go well in this dish. Consider adding English peas, sugar snap peas, spinach, asparagus, or other seasonal vegetables. Any type of squash or bell pepper is tasty as well. It doesn’t matter whether your artichoke hearts are frozen or packed in water or oil, but remember that the oil from marinated artichokes will add a powerful punch. If you like heat, 1/4 to 1/2 teaspoon red pepper flakes can give this dish more of a kick. If there is still liquid in the bottom when the pot comes out of the oven, let it sit with the lid off for a few minutes, which will release some steam and allow the absorption of more of the liquid. Spoon any remaining liquid over each serving as a sauce.

Greek Eggplant with Bread Stuffing

This is a complete and hearty vegetarian meal. To make this meal vegan, just omit the feta cheese or use a soy or rice cheese substitute. Try this dish with mozzarella cheese for a different flavor combination.

Glorious Macaroni and Cheese

This is a mac-and-cheese you can actually feel good about serving. Substitute any vegetables you prefer to boost the nutrition of this meal far beyond any boxed version bought at the store. Traditionally, American-style macaroni and cheese is made primarily with Cheddar cheese, but personally I’m a fan of using mozzarella and Monterey Jack. Of course, you can mix and match any combination of cheeses in this meal. Nondairy cheeses perform about as well as real cheeses in Glorious One-Pot Meals, although I usually look for those listing casein as an ingredient for that cheesy gooeyness that’s more like the real stuff. Casein might be a problem for vegans and those with mild dairy allergies, so keep this in mind. You can use much less cheese than I recommend and the dish will still turn out pretty cheesy. If you find it is too rich, try using harder, lower-fat cheeses such as Swiss, provolone, or Parmesan. Enjoy experimenting with your favorite cheeses. Some noodles and cheese may form a crusty layer along the bottom and lower sides of the pot. While my husband enjoys crunching these tasty strips, stirring well to coat the noodles with water when building the pot and paying careful attention to when the aroma first escapes the oven will help you avoid this.
