Campari-Poached Pears with Raspberry Sauce

Icy Fruit Salad
I hated this salad when I was growing up: It was pink, had too many ingredients in it, and my very Southern family loved it — three good reasons to abstain. During Thanksgiving and Christmas holidays, my mother would always go back for seconds, chiming, "You don't know what you're missing." But I knew, all right — an unappealing mishmash of canned fruit and mayonnaise. No thanks. However, as I've grown older my family's "Southern classics" don't embarrass me as much. I've actually eaten this salad many times as an adult, and though I'm not saying it's my favorite, sometimes I need seconds to be sure.

Halibut Steamed with Oranges, Tomatoes, and Olives
The fish steams directly atop the gently simmering vegetables in this flavorful and very easy dish. Serve with steamed rice tossed with lots of chopped fresh cilantro.
Market tip: Choose Pacific or Alaskan halibut rather than Atlantic halibut. Or substitute another firm white fish, such as Alaskan cod, mahimahi, or striped bass.
Walnut-Apricot Cake in Honey Syrup
Serve with vanilla ice cream, whipped cream or crème fraîche, or with slices of aged kefalotyri cheese or white cheddar.
Orange, Onion, and Balsamic Sauce
No need to squeeze oranges for this recipe, as the sweetness and body of store — bought juice are key. If you cook the mixture down until most of the liquid is evaporated, you’ll end up with a delicious onion confit rather than a sauce. Either way, we like to serve this with grilled meats and chicken as well as fish.
