"My wife, Jean, and I run a coffee farm on the Big Island of Hawaii," writes George Fike of Keauhou Mauka, Hawaii. Based on George's mother's recipe, this is an easy, moist, and tender carrot cake with delicate tropical flavors and macadamia nuts. There are a lot of ingredients, but they come together in just minutes.

Blood Orange Syrup

Blood oranges have red flesh and sweet-tart juice. They're available at farmers' markets and, increasingly, at supermarkets. This syrup would also be good over waffles.

You can substitute Boston or butter lettuce if Bibb isn't available. Save even more prep time by using packaged candied walnuts or other nuts that are now widely available and are often displayed in the produce or snack aisles of the supermarket.

Citrus Vodka

You can select any type of bottle you like for this citrus-scented spirit, but choosing a wide-neck one makes it a snap to place the citrus peel into the vodka. For easy gift wrapping, tie ribbons around the neck to match the colors of the peels. Tell the recipient to use the vodka in orange juice or lemonade, or shaken or stirred in a Martini, or to serve it ice-cold and straight up.
