Grilled Sausage, Pepper, and Onion Sub Sandwich
We first wrapped our faces around some authentic cheesesteaks and hoagies when we were shooting an episode of our Food Network show, Road Tasted, at Campo’s Deli in Philadelphia. Once we got a taste for Yankee-style sub sandwiches, there was no going back. Grilled onions, peppers, and meat plus melted cheese all piled onto a nice big roll—you can’t improve on that! Now you don’t need to be in Philly to savor this supreme sandwich experience.
Italian-Style Pork Chops
Southern cooks love to serve Swiss steak—a dish made with a tougher cut of beef that’s been pounded and braised with enough red sauce that it becomes so tender you can eat it without a knife. And that’s where the idea for this dish came from—pork chops cooked in marinara sauce and topped with cheese. We like to serve the chops with a bowl of egg noodles tossed with butter and chopped fresh parsley or with our Garlic Mashed Potatoes (page 21)—anything to soak up some of the delicious sauce.
Herb-Baked Caprese Tomato Stacks
This dish is so simply prepared, yet yields amazingly complex flavors. Sandy was inspired to make these tasty stacks from ingredients that seemed always to be on hand in her and Michael’s home. Because there are so few ingredients in this dish, it is imperative that your ingredients are quality. We also recommend that you take the time to make your bread crumbs from scratch, as it adds that extra something to the dish. And don’t worry about any extra bread crumbs getting stale; just store them in the freezer and they will stay fresh for months. If you find yourself with extra basil, don’t waste it! Use it to make some tasty pesto (see opposite).
Tuscan Ziti Bake
As well as being inexpensive and easy to make, pasta is actually low in fat. It typically tends to be what we combine it with (and how much we consume) that gets us into trouble! But if you are still worried about carbohydrates, you can always opt for low-carb or whole wheat pasta. Instead of substituting the pasta, we avoided calorie pitfalls by adding lots of zucchini and using naturally lower fat cheeses, such as feta. The addition of hot Italian turkey sausage and red pepper flakes adds just the right amount of heat to keep your taste buds happy. Pair this dish with your favorite salad to make a quick and satisfying meal any night of the week.
Easy Eggplant Parmesan
Crystal’s sister, Cindy, has always been a fantastic cook, but recently she has found a special connection in the kitchen. During a year-and-a-half-long treatment for breast cancer, she found that cooking is amazing therapy. Not only has Cindy been a great sounding board for our recipes, she concocted this easy, nutritious, and delicious dish that is so tasty that we just had to share it with the rest of the world. Go Cindy! Go Cindy!
Baked Four-Cheese Pasta
You haven’t had a baked ziti like this before. Our version of this traditional favorite enhances the flavor with a creamy co-mingling of tangy Gorgonzola, nutty fontina, mozzarella, and sharp Parmesan cheese. Since this is such a rich and filling dish, it’s great to serve when entertaining both vegetarians and meat lovers. Who doesn’t love cheesy baked pasta? If you can’t find Gorgonzola or fontina at your local market, you can substitute! Use regular ol’ blue cheese for the Gorgonzola and replace the fontina with shredded Italian cheese mix. These prepared cheese mixes usually include a variety of tasty Italian cheeses that complement this dish perfectly.
Deep-Dish Pizza, Chicago Style
Chicago’s best-loved food is deep-dish pizza. Do it up right, just as they do in the windy city, with heaping portions of spicy, hot Italian sausage, green peppers, fresh mushrooms, and onions. You can cheat a little and use refrigerated dough, but if you don’t want to upset the mob, try making your own dough from scratch (see page 194). Chicago-style pizza and our beloved home of Austin, Texas, have more of a connection than one might realize. Reportedly, the famous Chicago-style deep-dish pizza was invented by former University of Texas football star Ike Sewell. Go Horns!
Mexican Caprese
My version of the classic Insalata Caprese—an Italian salad of mozzarella, tomatoes, and basil—uses green avocados in place of the basil for a Mexican twist. I like to say that the red, white, and green represent the Mexican flag! I arrange this on a big serving platter and place it right in the middle of the dinner table or a buffet—it’s visually arresting and really makes the table pop beautifully.
Three-Cheese Pizza with Grilled Radicchio and Fig
My kids, Ella, Lulu, and Harry, love making pizza at home and getting their hands in the dough. You don’t need a special oven to make great pizza at home, although I recommend purchasing a pizza stone from your local kitchen store to ensure a crispy and crunchy crust. While you are at it, pick up a pizza paddle too. They often are sold as a set and run only around $30, so they’re not a major investment. The pizza dough in Basics is extremely versatile and can be topped with basically anything you can come up with. Here I wanted to come up with a vegetarian pizza that was so packed with interesting flavors, no one would miss the meat. Radicchio and arugula provide a slightly bitter balance to the melted and wondrous cheeses.
Warm Fresh Mozzarella with Grits, Grilled Radicchio, and Balsamic
If you can’t grill the radicchio, just sear it on the stovetop in a cast-iron pan over medium-high heat until it is caramelized and tender.
Grilled Chicken and Tomato Salad with Balsamic Vinaigrette
A flourishing garden filled with home-grown vegetables was a source of pride to Big Bob, and his favorite area of the garden was the tomato patch, where he tended a variety of cultivars. By planting different kinds of tomato plants, he was ensured fresh ripe tomatoes all summer long. His favorite summer dish was a tomato salad made with whatever types of tomatoes were in season. This recipe combines two of Big Bob’s Southern favorites: grilled chicken and tomato salad. It is hard to beat the sweet taste of tomatoes in season combined with the charred flavors of chicken cooked outdoors. Each element of this dish can be served on its own, but together they form a signature dish that you’ll return to again and again all summer long.
Fresh Tomato & Mozzarella Salad
We make this summer salad from the beginning to the end of tomato season, and we love it every time. It’s beautiful made with heirloom tomatoes of different colors.
Tortilla Melt
Up to a day before baking, Tortilla Melts can be assembled, wrapped in foil, and refrigerated. Bake in the foil for about 15 minutes and then remove the foil and bake for about 5 minutes more for the tortillas to crisp. Leftovers can be refrigerated for up to a week and reheat well.
