A Salad of Beans, Peas, and Pecorino
Among the charcoal and garlic of midsummer’s more robust cooking, a quiet salad of palest green can come as a breath of calm. Last June, as thousands joined hands around Stonehenge in celebration of the summer solstice, I put together a salad of cool notes: mint, fava beans, and young peas—a bowl of appropriate gentility and quiet harmony.
Roasted Beets with Persimmons over Market Greens
Luscious persimmon fruits blow in and out of markets in late fall. They grow wild in North America—I’ve found them while foraging in Maryland—but the native species is small and astringent. The two kinds found in stores are cultivars from Asia. Hachiyas are oval-shaped and must be completely soft, all the way down to the base, before being eaten. Fuyus, which look like flat tomatoes, are eaten firm. If you can wait until it ripens, the Hachiya has more flavor, but the Fuyu works just as well in this recipe.
Braised Pork Belly
The elegant preparation I introduce here, braised pork belly served in a “sandwich” with a tangy hoisin sauce, is a mouthwatering appetizer. But this dish is also fundamental to ramen noodle cooking. Sliced, it’s a classic topping for ramen noodles. And the braising liquid has many uses. You flavor ramen broth with it; simmer bamboo shoots in it, a classic garnish; and even cook hard-boiled eggs in this liquid, which are then sliced in half and added to a bowl of noodles. (See page 24 in the ramen section for an example.) This recipe takes a little bit of time but is very simple to execute—do not be afraid. In fact, when you’re cooking the pork or simmering it in the braising liquid, just set a kitchen timer and forget about it. You don’t have to watch it closely.
Grilled Pork with Green Papaya Salad and Rice Noodles
This Southeast Asian–influenced dish is perfect for summer dining: it is light and refreshing, with tangy sweet-and-sour flavors. I love green papaya, an ingredient that has an appealing crunch and natural sweetness. Lemongrass, another one of my favorite Southeast Asian ingredients, adds a wonderful lemony fragrance. I cook with both at my restaurant.
Stacked Chicken Tostadas
One of the best characteristics of the Mexican kitchen is that many recipes are an assembly of ingredients and often use up leftovers. This is one such recipe. If you think of a tostada as an edible plate, you will realize the endless options for creating them. A meal is usually made up of two tostadas, which I like to stack because placing them side-by-side looks a bit awkward on a plate. And remember, tostadas are usually eaten with your hands!
Smothered Shrimp Tostadas
The shrimp in this recipe are cooked in a manner that is referred to as enchilado, or in a chile sauce. While the shrimp go well served atop crisp fresh lettuce and a crunchy tortilla, they can also be served over a bed of white rice with extra sauce drizzled on top. Either way, you will find the shrimp to be as versatile as they are delicious.
Creamy Chicken Chipotle Salad
This is a great main-course salad that brings together many of the fresh flavors of the Mexican kitchen. Similar in nature to a Cobb salad, it has a few fresh components that can be doubled or substituted, making it a great vehicle for using up extra produce.
Chipotle-Glazed Steak and Avocado Salad
I love steak salads. It must be something about the contrast in texture and temperature that I find appealing. The best steak salads give you meat that is juicy and flavorful with a charred exterior crust on the steak that goes great against the fresh, crisp lettuce. The glaze is the key to this salad because the sugars in it caramelize and create that crunchy exterior.
Tuscan Salad
This hearty salad is perfect as a meal. The cannellini beans, ham, and eggs add a lot of substance, so this is no wimpy little bowl of greens. The best part, though, is that it’s so quick and easy to put together.
Spicy Lettuce Wraps
Although this recipe isn’t hard, it does involve a fair amount of chopping. To me it’s worth it because I love lettuce wraps, but the ones in restaurants are too high in calories. Using vegetables in place of some of the chicken dramatically cuts the calories in this dish, but it doesn’t change the flavor. Fair warning though; if you’ve never used chili paste before, it’s hot. You may want to start with half the amount and taste the sauce before adding more.
Chicken Caesar Salad
I love Caesar salad but, of course, my sister has to ruin it by adding chicken to cover up the taste of the lettuce. I mean really, how can you not like lettuce? This dressing is also really good on pasta salad, and at least Jill doesn’t feel the need to add meat to that.
Steak Cobb Salad
Okay, the truth is, I’m not a big fan of lettuce, but I love steak. So this recipe was my mom’s way of getting me to eat salad. She figured if she put enough stuff on it that I liked, I wouldn’t notice the lettuce. Well, I’m not that stupid—I noticed the lettuce. But, her strategy worked, and I will admit (grudgingly) that this salad is good.
Thai Tapioca Pearl Dumplings
Thai food is full of bold juxtapositions of flavor and texture. For these crystalline dumplings, the chewy skin is made from tapioca pearls (saku in Thai). The filling of pork, peanuts, shallot, palm sugar, and fish sauce is crumbly, sweet, salty, and savory. To eat, the dumplings are wrapped in lettuce leaves with fresh herbs and hot chiles. Saku sai mu is a popular street food in Thailand; here in the States, I have purchased them at Thai markets and snack shops. Making the dumplings at home ensures freshness and availability, and the ingredients can be found at most supermarkets. Hard-core cooks may handmince pork shoulder or chicken thigh and seek out cilantro root and palm sugar from Southeast Asian markets, but ground meat (avoid superlean pork or chicken), cilantro stems, and brown sugar are terrific stand-ins.
Curried Chicken Salad
This salad was inspired by one of those gorgeous, colorful Bollywood flicks that offer a feast of singing, dancing, and romance. I love Indian food, as it was my first real introduction to all things curry. Only much later did I learn that turmeric, a typical spice in curries that gives them a yellow tint, has tremendous antitumor and anti-inflammatory properties. And to think, I loved it just for its taste! Here, I was hankering for a swirl of flavors with an Indian feel. The chicken makes a great starting point because it’s full of protein and amenable to all sorts of accessorizing. In this case, the mango and raisins play delightfully off the curry spices.
Zesty Green Gazpacho
A splendid no-cook soup that will awaken taste buds dulled by summer heat. This soup can be eaten as soon as it is made, but definitely benefits from having time to stand for several hours so that the lively flavors can mingle. This soup is a great first course for a Mexican or Southwestern-style meal.
Cream of Lettuce Soup
Cheddar-Oat Griddle Biscuits (page 153) provide a nice contrast to the mild flavor of this pleasant summer soup. Or try it with Garlic Croutons (page 159), if you’d prefer a little crunch.
Garden Greens Soup
A soup that looks and tastes garden-fresh, this is a good one to serve all summer long.
Puree of Spring Greens
For some years, my family has belonged to a community-supported farm. In late spring, there is a plethora of greens of all kinds—Asian greens, spinach, and lettuce. At some point there seems to be more than can be used in a week, even by my veggie-loving family. That’s when I turn to this recipe—it has become an annual tradition! Make sure all greens are very well washed.
Potage Maigre
This light soup of lettuce, cucumber, and fresh spring peas was quite common in nineteenth-century America. Potage maigre translates loosely as “fast day” soup, traditionally made for Lent. Versions of it appear in old Creole cookbooks.
