Sautéed Halibut with Arugula, Roasted Beets, and Horseradish Crème Fraîche

The colored beets and bright green arugula in this dish make for a visually stunning presentation. The sweet roasted beets marinated in lemon vinaigrette play off the pure white fish and horseradish cream. Look for a few different types of beets, such as golden beets and Chioggia beets, and dress them separately, so the dark ones don’t bleed their juices onto the lighter ones. In the spring, you could make this dish with wild salmon. And to make a more hearty meal, serve some beluga lentils on the side (see page 331).

Braised Beef Short Ribs with Potato Purée, Swiss Chard, and Horseradish Cream

Every chef has a love-hate dish, the dish that made it into the first review, the one that customers call ahead for, the dish, therefore, the chef will never be able to take off the menu. Short ribs are mine. I used to be tortured by them, but I’ve come to accept them as a permanent member of the Lucques family. The short-rib saga began one cool and rainy weekend when, inspired by the weather, I made them for a Sunday supper. The response was so overwhelming that I added them to our daily menu. When spring arrived and the city began to warm up, I replaced the short ribs with something lighter. That week, I went out to the dining room to say hello to a friend and was assaulted by diners at three different tables, who waved me over to find out (you guessed it) where the short ribs had gone. At first I was stubborn and refused to serve them in 90-degree weather. But I had a change of heart when I realized how much people loved them and how easily I could satisfy their craving. The short ribs went back on the menu and will probably remain there for all eternity.

Shrimp with Peach Cocktail Sauce

I love to present this in martini glasses like an old-school shrimp cocktail. The sauce has the horseradish bite of the classic, but with a juicy, sweet freshness from the peach. Traditionally, the shrimp would be chilled first, but I serve them warm for a hit of hot and cold at the same time in each bite.

Tempeh Fries with Horseradish or Wasabi-Dill Mayonnaise

If your meal needs just a little extra something in the protein department, but not necessarily a filling main dish, this is a nice choice. It also works well as an appetizer. These fries can be a bit addictive, so you may want to double the recipe if serving hungry tempeh fans.

Smashed Turnips with Fresh Horseradish

We love turnips and don’t want you to pass them by the next time you’re at the market. When cooked right, their earthy flavor is seriously irresistible. At the Shop people go crazy for them. The kick from the horseradish brings out the natural sweetness, and the sour cream adds a tangy, rich element. We love these with the Salmon Balls (page 34) or Venison, aka Bambi, Balls (page 42).

Seared Tuna with Wasabi Green Onion BBQ Sauce

The tickle factor in this dish comes from the wasabi—Japanese horseradish. You can find it in the Asian section of your supermarket. And since we’re cookin’ in an Asian mode, we like the tuna served nice and rare, almost like sushi.

I’m a big fan of horseradish. When it’s stirred into BBQ sauce it takes beef to the next dimension. If you take a few minutes to start this dish in the morning before work, you’ll be eating about an hour after getting home at night.

These delectable shrimp boiled in beer and rolled in lots of spice and garlic are our most popular appetizer. Their “a-peel” has always been in the roll-up-your-sleeves sloppy nature of eating ‘em. There’s nothin’ polite about ‘em, and that’s the way we like it.

Pickled Eggs with Celery and Horseradish

Here is a recipe for a brine that is sufficient to pickle up to 10 normal-size eggs. If you are using quail eggs, you can obviously pickle a lot more. The day we took this picture we had quail eggs, but truly, our favorite eggs are the smallest hen eggs available: the peewees. We even love the name, and their size is perfect because you can gobble up two or three. Remember to leave your eggs at room temperature for an hour before cooking them.

Smorgasbord

We never went hungry as kids. And we have no inherent fear of the next Great Depression or anxiety about canned food. Still, we always want more. Wanting and eating four of the Swedish shrimp-egg things you can buy in the restaurant at IKEA is a good example of that. Another good example is how we would have piled more stuff on this modest toast if we could have fit it: a can of sardines from Bretagne, maybe, or quails stuffed with crab hiding in the corner. Our first reaction on seeing this photo was, “Shit, we forgot clams.” There are thirty items here, and if we do another book, we will put in sixty, we promise (just so we don’t run out of food). Disclaimer: In no way do we aspire or pretend to serve authentic Scandinavian food. This is just our view projected onto a classic. The closest we have been to Scandinavia is Fred Heimlich-maneuvering a Dane who choked on the biggest oyster ever eaten raw. And it was a weird experience because it was like they kissed; they were shy around each other for the rest of the evening. In the list that follows, an asterisk means a recipe is included. If there’s no *, it means the item is straightforward and you can figure it out. We suggest serving the items on rye bread or a baguette sliced lengthwise and buttered. You then eat your open-faced sandwich with a fork and knife. Or, you can do as we do: add condiments and eat it like a military strategist, portioning, placing, moving, and rationing. Regarding yields: the smorgasbord is more of a concept than a straightforward recipe. The smorgasbord shown here serves 4 to 6, and includes every single thing listed. You don’t have to follow our lead (though we would be pleased). Typically we put 4 or 5 proteins and 4 or 5 condiments on the average smorgasbord. Following this rule, each of the small recipes serves four.

Tangy Rémoulade

A cold mayonnaise-based sauce that originated in France, rémoulade is a traditional condiment for crab cakes in New Orleans. You can assemble this version, a quick blend of pantry items, at the last minute or a few hours ahead. Its vivid color and zesty flavor make it the best choice for accompanying delicate chilled foods such as poached chicken, white fish, and, of course, crab cakes.

Lemon-Horseradish Fish Cakes

SECRET INGREDIENT Cracker crumbs help bind the fish mixture so it holds together when cooked; they also lend a crunchy coating to the cakes, which are dredged in the crumbs before baking. Put the crackers in a resealable plastic bag and crush with a rolling pin or small heavy skillet, or pulse in a food processor until coarsely ground.

Salmon Burgers with Yogurt-Dill Sauce

WHY IT’S LIGHT Broiling is a fat-free way to cook salmon burgers; these are perked up with lemon, horseradish, and scallions and served on toasted whole-wheat buns. Yogurt flavored with fresh dill makes a very delicious—and low-fat—topping.

Better Cocktail Sauce

This is a rich cocktail sauce, laced with butter but made spiky with vinegar and horseradish. Make it as hot as you like and serve it warm or cold. It is a natural partner for poached, grilled, or otherwise cooked shrimp.
