Cornish Hen with Cherry-Hazelnut Wine Sauce

When I first visited Portland, Oregon, I left with two regrets: that I didn’t plan on more days (so I could eat more) in that glorious food-obsessed city, and that I didn’t pack an extra duffel for all the edible stuff I wanted to carry back home. On that last point, I limited myself to dried sour cherries and dry-roasted hazelnuts. When I wasn’t scarfing them out of hand, I threw them into dishes, alone but often in combination, proving the validity of the saying, “If it grows together, it goes together.” For this dish, I turned the hazelnuts and dried cherries into a sauce that can be made with Mulled Wine Syrup (page 6) or Pinot Noir (another Oregon specialty) to pour over pan-fried Cornish hen. I like to cook it al mattone, which means “with a brick,” a quick method that results in even cooking, a crisp skin, and moist flesh.

Pink Grapefruit, Avocado, and Watercress Salad

This elegant, light salad is ideal to serve as a first course. Pink grapefruit and peppery watercress cut the richness of avocado, and a scattering of toasted hazelnuts and hazelnut oil in the dressing suggest a flavor of early fall. Prosciutto is a graceful inclusion, but you can leave it out for a lighter vegetarian salad if you like.

Skirt Steak with Hazelnut Picada and Wilted Escarole

Picada hails from Spain, or more specifically, from Catalonia. Flavored with nuts, bread crumbs, and herbs, it is a punchy, vibrant paste—often used as a sauce to enliven dishes, and to thicken stews. Here it partners full-flavored skirt steak and elegant escarole lettuce, which is just wilted to serve as a vegetable. Like romesco, there are plenty of other uses for picada, if you have any leftover.

If they're not available, substitute additional large red peppers such as dried ancho chiles. Barb and Vitaly love the idea of using hazelnuts instead of almonds, which are more common in this sauce. Use spot prawn instead of extra-large shrimp when available at your local fish market.

Chocolate-Hazelnut Mousse

Chocolate-Hazelnut Mousse is an elegant variation on Chocolate Mousse with hazelnut paste. Like Chocolate Mousse, this can be spooned into attractive goblets, topped with a bit of whipped cream, and served as is, or used as a filling for a layer cake. It also can be piped over the cooled Hazelnut Brownies, creating a simple but surprisingly memorable dessert.

Roulade au Chocolat Pour Julia

Mary made a version of this cake for Baking with Julia, the television series with Julia Child. (The recipe was included in the cookbook based on the series.) It's based on our Chocolate Chiffon Cake, which we spread with filling and then roll, making this the most delectable "jelly" roll you have ever tasted. When the Spago staff sampled the cake, they all came back for second helpings—and they're a tough audience.

Frisée and Radish Salad with Hazelnut Dressing

This riff on the classic frisée salad with lardons is the perfect thing to make with leftover hazelnuts from our 10 Minute Main Hake with Hazelnuts and Capers . It looks delicate, but its vinaigrette is enriched with the nuts and some bacon fat, which not only gives it substance but also balances the bitterness of the frisée and the bite of the radishes.
