Hamantashen
As a child, I love the holiday of Purim, the time when my mother would make hamantashen, filled with apricot jam or dried prune fillings. As a young adult, when I was living in Jerusalem, I discovered a whole new world of hamantashen fillings, and the magic of the shalach manot, the gift baskets stuffed with fruits and cookies. Traditionally, these were made to use up the year’s flour before the beginning of Passover as well as to make gift offerings. Strangely enough, hamantashen are little known in France, except among Jews coming from eastern European backgrounds. The North African Jews don’t make them, nor do the Alsatian Jews, who fry doughnuts for Purim (see following recipe). French children who do eat hamantashen like a filling of Nutella, the hazelnut-chocolate spread. You can go that route, or opt for the more traditional apricot preserves, prune jam, or the filling of poppy seeds, fruit, and nuts that I’ve included here.
Compote de Pruneaux et de Figues
In the early twentieth century, a Jewish woman named Geneviève Halévy Bizet, the mother of Marcel Proust’s friend Jacques, held one of the most popular women’s salons in Paris, depicted in Proust’s work. Gertrude Stein, the Jewish writer, along with her partner, Alice B. Toklas, hosted another famous salon, conversing with and cooking for writers and artists during the many years when they lived together in France. One of the recipes Alice liked to serve to their guests was very similar to this prune-and-fig compote. In Alsace and southern Germany, prune compote is eaten at Passover with crispy sweet chremslach, doughnutlike fritters made from matzo meal (there is a recipe for them in my book Jewish Cooking in America).
Citrus-Fruit Soup with Dates and Mint
When I interviewed Gilles Choukroun, one of the darlings of a new generation of French chefs who are injecting playfulness into French food, he had just opened the Mini Palais, a beautiful restaurant in Paris’s newly renovated Grand Palais exhibition hall, across from Les Invalides. In addition to his nascent restaurant empire, Gilles is also the father of Generation C, which stands for “Cuisines et Culture,” a group of chefs who teach cooking to the disadvantaged in Paris. Gilles, whose father is a Jew from Algeria, experiments with the spices and flavors of North Africa to accent his French food. One of his signature desserts is this refreshing citrus-fruit soup. It makes the perfect ending to a North African meal, especially with cookies on the side.
Gratin de Figues
When Elie Wiesel stopped in Bordaeux to give a speech, he asked members of the Jewish community for suggestions on where to eat. They told him to go to Jean Ramet, a marvelous thirty-seat southwestern-French restaurant. Run by a Jewish chef, it is located right down the street from the eighteenth-century Grand Théâtre. Raised in a Polish Jewish home in France, Jean doesn’t have many culinary memories from his childhood. He grew up in Vichy, where his parents, like so many other Jews returning to France after the war, had priorities other than food. But food became a career for Jean. He apprenticed at the three-star Maison Troisgros in Roanne, learning pastry skills. “Pastry-making gives you discipline; it is very important for a chef,” he told me. “You need the rules of pastry first.” In the 1970s, Jean met Tunisian-born Raymonde Chemla on a youth trip to Israel. They have now been married for more than thirty years, living mostly in Bordeaux, where they run the restaurant. On vacations, they often travel to Morocco, because they love the food of North Africa. “Moroccan food is sincere,” said Jean. “When I met Raymonde, I fell in love with North African spices, such as cinnamon, mint, and cloves.” This gratin of figs with a zabaglione sauce and a splash of orange-flower water is a dish that celebrates North African flavors and classic French techniques. It also captures the essence of the flavor of fresh fig. As the French Jewish sage Rashi so beautifully stated in his commentaries on the Bible, “Summer is the time of the gathering of the figs and the time when they dry them in the fields, and it [the dried fig] is summer.”
Oatmeal Bread with Fig, Anise, and Walnuts
The French love their bread, but they usually buy it in boulangeries. In many homes I visited, though, people would make a quick bread like the goat-cheese-and-apricot bread on page 145. When they had a bit more time, on a weekend morning perhaps, they would make a heartier bread and eat it throughout the week. This recipe, which I tasted at a friend’s house in Paris, is very forgiving and can withstand additions and variations. I often add bits of leftover nuts and dried fruit. Great for breakfast with goat cheese or preserves, it is also a wonderful sandwich bread.
Green Fig Preserve
You can serve this with thick cream or mascarpone, or with vanilla ice cream. For the preserve to last a long time, it needs the same weight of sugar as of figs. If you will be eating it within 2 weeks you can make it much less sweet, but keep it in the refrigerator.
Pear and Leaf Salad
Use pears that are ripe but still firm (Comice is a good variety) and salad leaves such as curly endive, chicory, cress, arugula, and lamb’s lettuce (mâche). You can stick to one type only or use a mix.
Blue Cheese Soufflé with Chamomile-Fig Compote
Cheese for dessert is very European and a nice change from an overly sweet indulgence. This savory dessert puffs up so high it’s gorgeous; make sure folks are around when you take it out of the oven. An after-dinner experience.
Prosciutto-Roasted Figs
These little gems are what I like to think of as new-wave pigs in a blanket. The ham and fruit are a perfect balance of salty and sweet, and a sip of champagne complements the flavors perfectly.
Spiced Leg of Lamb with Fig Caponata and Harissa
The foods from North Africa and the Middle East truly have some of the deepest flavors I’ve ever tasted. Don’t be daunted by the length of the recipe: This dish is not at all difficult to throw down, and the results are well worth the long shopping list. The Harissa sauce can be made a day ahead and the caponata is also good by itself or as a side dish.
Stuffed Figs Sibari-Style
Throughout southern Italy, almond-stuffed figs are a traditional holiday treat, made in every household to offer visiting family and friends. Makes sense for a region that historically had little wealth, and where figs and almonds were abundant and always stored for winter use. Figs and almonds are also a naturally delicious pairing, in my opinion. Though it is not fancy, a dried fig with a single toasted almond tucked into it is transformed into a delicious sweet. In Calabria, though, the preparation of stuffed figs, fichi ripieni, is not always so simple. The region’s figs are prized for their excellence, both fresh and dried. And especially in the northern province of Calabria—in the area of Sibari, where figs grow best—they’re stuffed in all sorts of ways, with different nuts, spices, sweetenings, cocoa, or candied fruits. All of these flavorful ingredients are mixed together to make the stuffing for fichi ripieni alla Sibarita, figs stuffed Sibari-style, considered one of Calabria’s signature dishes. There are many versions of this classic. In most, the figs are baked after stuffing, usually with saba (cooked grape must) or other syrup. Sometimes the figs are then packed in some preserving medium for long storage and more flavor, such as saba, spiced sugar, or sweetened liquor. My version is really a dessert, best served right away. The stuffed figs are baked in a pool of pomegranate and lemon juice, which concentrates in the oven into a luscious thick syrup that I drizzle over the warm figs. It’s a great dessert anytime of year, but particularly during the holidays it has the spirit of an old Italian custom.
Arugula with Brûléed Figs, Ricotta, Prosciutto, and Smoked Marzipan
Chef Graham Elliot, of restaurants Graham Elliot and Grahamwich in Chicago, shared this recipe as part of a Tree-Trimming Party Menu he created exclusively for Epicurious. Here's a salad that puts a twist on classic holiday flavors. Homemade smoked marzipan mingles with crisp prosciutto and caramelized figs on arugula dotted with a ricotta cream. If your ricotta is on the wet side, see our instructions for how to drain it, an important step before making the cream. The marzipan can be made up to five days in advance.

Fabulous Fig Parfaits
Fresh figs are a wealth of life force, containing thousands of tiny seeds that make them a very virile and hormone-rich food. These delicate fruits are very popular in the cuisines of Europe and the Middle East, where they originated. Feel free to use any sprouted nut in the preparation of the nut kreme; pecans are my favorite.

Cranberry, Fig, and Pinot Noir Chutney
Cranberries are transformed with sweet, subtly earthy dried figs and velvety, slightly spicy Pinot Noir into a chunky, jamlike chutney. Orange zest infuses the mix with its bright citrus flavor and essential oils. Ginger works well in both savory and sweet preparations, and its touch of heat bridges the wine and fruit here. You can serve this chutney instead of the standard cranberry sauce at Thanksgiving, but it is also wonderful with pork and venison dishes, spread on a sandwich, or as an accompaniment to a cheese plate.

Roasted Mission Figs with Honey
This is an easy way to enjoy figs that aren't dead ripe. I particularly like Mission figs here because of their dark purple flesh and skins, which roasting burnishes to a fine color. I serve these warm with just a dollop of crème fraîche slipped in between the two halves. This is easy to make for any number of people, from one to many.
