Sautéed Pork Tenderloin with Prunes

To sauté pork tenderloins, cut them into rounds (noisettes) about 3/4 inch thick, brown them over high heat, and then continue cooking them until they are firm to the touch. Here, they are served with a sauce made with prunes soaked in wine, a little meat glaze (if you have it), and some cream.

It's likely that Mrs. Hughes and Mr. Carson were raised on this popular Victorian dessert, and Mrs. Patmore would have no problem reintroducing this to her staff. It's likely that, when enjoying this dish, Mrs. Hughes and Mr. Carson, usually so stoic, would experience intense nostalgia for their childhoods. Of course, they'd be careful to shield their intense feelings from the rest of the staff!

Spice Cookies

During the late nineteenth century, as part of their Protestant beliefs, the Templers arrived in Jerusalem from Europe and established the German colony, a picturesque little neighborhood southwest of the Old City that to this day feels unusually central European. This is the "civilized" part of town, where you go for a coffee and a slice of Sacher torte if you wish to escape the harsh Levantine reality. Germanic influences on the city's food are evident in Christian contexts—the famous Austrian hospice at the heart of the Old City serves superb strudels and proper schnitzels—but Czech, Austrian, Hungarian, and German Jews arriving in the city from the 1930s have also managed to stamp their mark, opening cafés and bakeries serving many Austro-Hungarian classics. Duvshanyot, round iced cookies, made with honey and spices, typically for Rosh Hashanah, are possibly a result of this heritage; they are similar to Pfeffernüsse. These are very loosely inspired by duvshanyot, or Pfeffernüsse. They are actually more closely related to an Italian spice cookie and are hugely popular on the sweet counter at Ottolenghi over Easter and Christmas. The recipe was adapted from the excellent The International Cookie Cookbook by Nancy Baggett.

Tsimis

Rae: This is an old-timey High Holiday vegetable side dish, sweetened with honey and raisins or prunes and, sadly, often simmered to mushy blandness. To get past that problem, roast the carrots first, to brown them and coax out their natural sweetness, and then bring everything together on the stove top at the end. Sunflower seeds add a nutty note to the chewy prunes and raisins.

Hamantaschen

Rae: We wanted to come up with a version of this Purim pastry that was light and crumbly but not dry, and these really fit the bill. At Mile End we make the three classic kinds: apricot, poppy seed, and prune. If you want to make a mixed batch, just make all three fillings, using a third of the amount of each of the filling ingredients called for below. Mile End's baker, Rich Maggi, swears by his tortilla press for flattening the dough, though a rolling pin will also do the trick.

Huachinango a la Veracruzana (Veracruz-Style Red Snapper)

This recipe calls for a whole gutted fish. You can also substitute 8 (7-ounce) fish fillets, if preferred. Just be sure to reduce the cooking time to about 20 minutes. My mother-in-law makes this stew almost every Shabbat because it is my sister-in-law's favorite! Whenever I buy quinces, I have to hide them because my children love to eat them raw! This fruit is not really meant to be eaten raw…it is meant for jams and stews. I guess my kids must be "hard-core" Persians! The quince tree originates from Iran and Caucasus. The Romans used its oil for perfume, while the Greeks enjoyed it cooked.

Flageolets with Autumn Greens and Fresh Bacon

I love flageolets, the immature kidney beans that the French have been cultivating since the 1800s. They come in a variety of colors; I prefer the green ones, which are slightly firmer than a kidney bean, because they have a wonderful flavor and are really elegant in salads and stews. A little fresh bacon goes a long way toward making these beans remarkable. Curing it for a few hours in salt and sugar helps the bacon retain its flavor in the cooking process. For the greens, I like to use kale and mustard greens, but this dish is wonderful with any hearty green like dandelion greens or even cabbage. The pressure cooker helps to cook the beans easily and imparts all the wonderful porky-ness of the bacon.

Bubby's Granola

This homemade cereal is hearty, wholesome, and filled with nutritious ingredients such as walnuts, rolled oats, raisins, and sunflower seeds. Granola is very flexible, so you can add whatever fruits and nuts are your personal favorites. This granola is great with milk or yogurt, or even as a topping on pancakes. Because raisins can make the granola soggy, we add them right before serving. The granola keeps well for a long time, so this is a big batch—it makes three pounds. Just keep it in an airtight container and eat it for breakfast all week, as we do at Bubby's or cut it in half to feed a smaller crowd.

Wine-Braised Brisket with Tart Cherries

Beef brisket is the centerpiece of many Jewish holiday meals, particularly at Passover, and every family has their favorite way of preparing it. There are countless recipes out there, but how many do you need besides your grandmother's? At least one more: This one!
Why? Because the meat is slowly braised in Pinot Noir, and the cherry notes in the wine pair brilliantly with dried tart cherries, which plump up with winey beef juices to become little mini-pouches of flavor on their own. Add to that a bit of star anise, which perfumes the brisket and your home with an exotic and enticing hint of licorice. Season the mixture with the sweet-and-sour agrodolce dance of brown sugar and balsamic vinegar, and you have a brisket that is at once counterintuitively familiar and wonderfully different. Like all braised meats, brisket improves in flavor, and slices more easily, if made a day ahead and chilled (see Cooks' Notes).
