Micro-Broiled Winter Squash
The key to enjoying dense winter squash more often is a time-saving ten or so minutes in the microwave. By cooking them first, you avoid the anxiety and danger of hacking a sturdy squash or your finger in half. Or, look for packages of ready-to-cook precut and peeled squash in the supermarket. After cooking, the other trick is to scoop the flesh into a casserole where it’s easy to char evenly under the broiler in a couple minutes. This way no one has to negotiate an unwieldy squash boat, and everyone gets as much or as little as they want. Make the casserole ahead and you’ll be glad come dinnertime. The trio of squash sauces shows how well squash gets along with a full range of sweet to savory flavors. One sauce is traditional—buttery and sweet with pecans. The second is a sweet-savory exotic beauty blending spicy chutney, dried cranberries, and almonds. The third, a savory tomato, mysteriously brings out the sweetness of the squash without overpowering it. Serve all three sauces with any squash combo and watch everyone duke it out for a favorite.
Cranberry-Walnut Clafoutis with Bourbon Whipped Cream
The clafoutis was invented in Limousin, France, to showcase that region’s famous cherries. Some compare the eggy consistency of clafoutis to flan, as it’s neither cake nor custard. To me, it’s more like an extra-thick crêpe dotted with fruit. Clafoutis puffs beautifully as it bakes, and hot out of the oven, it’s crisp on the outside and airy in the middle. When chilled, however, it collapses, becoming dense and custardlike. I love it both ways. One of the great aspects of clafoutis is its versatility. Once you know how to make the batter, you can make great desserts with it year-round. At Lucques, we’ve made clafoutis with sautéed apples in the winter and with berries in the summer. For the fall, I like a clafoutis featuring that indigenous American jewel, the cranberry. This dessert is delicious as is, but if you want to gild the lily, serve it with a dollop of bourbon-spiked whipped cream.
Broccoli Salad with Yellow Peppers, Pine Nuts, and Cranberries
Luscious and yummy are rarely terms applied to salad, but I would be so bold as to use them to describe this one. Offbeat, colorful, and quick, it’s a dish I make often in winter months when cool, crunchy salads are less enticing.
Quinoa with Cauliflower, Cranberries, and Pine Nuts
If I had to choose a favorite quinoa dish, it would be this one. With just a few ingredients, it manages to showcase sweet, savory, and nutty flavors all at once.
Apple-Cranberry Crumb Pie
Unlike fresh cranberries, which can be tart, dried cranberries provide an extra layer of sweetness to the classic apple pie. This dessert is a great finale to a pork roast dinner. Try it with the Traditional Pastry double crust (page 5) as an alternative.
Fruitcakes
Feel free to substitute 2 1/2 pounds of your favorite dried fruits for the ones called for here. If you choose larger fruits, such as pears or apples, be sure to cut them into a 1/4-inch dice before using. Cakes can be wrapped in plastic and kept at room temperature for up to three days or in the refrigerator for up to six months.
Cranberry-Pecan Rye Bread
This free-form dough can be shaped into two longer loaves or one big round; you may need to adjust the baking time.
Dried-Fruit Star-Lattice Tart
A lattice crust is easily altered to replicate a number of artisanal basketweave designs, such as this striking six-point star pattern. The filling is also out of the ordinary—a blend of dried, not fresh, fruits is poached in a fragrant spiced syrup.
Dried-Cranberry Shortbread Hearts
This simple shortbread is first baked in a square pan and then cut into heart shapes. For variation, other dried fruits or mini chocolate chips can be substituted for the cranberries.
Oatmeal Raisin Cookies
Toasted wheat germ and a generous amount of raisins make these cookies hearty. You can substitute an equal measure of dried cranberries, sour cherries, or chopped apricots for the raisins. To make oatmeal–chocolate chunk cookies, substitute 12 ounces good-quality chocolate, coarsely chopped, for the raisins.
Magic Blondies
These single-serving goodies are kitchen wizardry: Blondie batter is tucked into cupcake liners, topped with a combination of coconut, chocolate chips, walnuts, and dried cherries, and baked until golden.
Cornmeal Biscotti with Cranberries and Pistachios
These green-and-red-studded biscotti look vaguely Christmassy but are good any time of year. Feel free to swap in other nuts or dried fruit—this combo is particularly pretty but you could use golden raisins, almonds, or hazelnuts as well. To make the biscotti even more decadent, dip in melted chocolate.
Cranberry Almond Bark
The health benefits of dark chocolate, almonds, and dried fruit make this a great option to serve as a snack or to give as a gift to a health-conscious friend. In a box or tin beautifully tied with ribbon, the flourless bark can also make a welcome Passover hostess gift, which can be served immediately or nibbled on all week long. The dried cranberries add a delicious chewiness to this otherwise solid bark. All sorts of dried fruits and nuts can be used, but when buying the dried fruit, especially cranberries, be sure to pick an unsweetened variety. The added sugar can change the taste of the fruit and also alter the tempered chocolate.
Roasted Stuffed Chicken Breast and Broccoli
Roasting a large chicken breast is a nice alternative to cooking a whole chicken, especially if you prefer white meat. A bone-in, skin-on turkey breast half (about three-and-a-half pounds) also works well in this recipe; cook for about an hour and a half.
Parsnip Spice Cake
PARSNIPS HAVE A DEEPER, MORE SOULFUL FLAVOR than carrots, and this hearty root vegetable takes center stage in our version of a carrot cake. Sweet and spiced with ginger and cloves, this moist cake makes a great birthday cake or anytime cake.

Cornmeal, or polenta, is a staple ingredient in the Italian pantry and is used for both savory and sweet dishes. This not-too-sweet cake combines cranberries and orange, which remind me of the holidays—which is when I most often make this. It’s one of those versatile cakes you can serve for breakfast, with tea in the afternoon, or at the end of a big meal topped with a scoop of vanilla ice cream. I like to make a few extra to give as hostess gifts.
Roasted Citrus-Herb Game Hens with Crouton Salad
Few things are more enticing than the smell of a chicken roasting, but for a special meal or a romantic evening such as Valentine’s Day, I like to serve game hens, so each person can have a whole bird of his or her own. It’s a beautiful presentation that is ridiculously easy to put together, and the pan juices, full of fresh citrus flavors, are especially delicious. If you prefer, though, you can easily make this with a large chicken; just increase the roasting time to 60 to 75 minutes, depending on its weight.
