Bacon-Wrapped Dates
I am usually not a particular fan of dates. Normally, I think they are too sweet and sticky, but in this dish the smokiness of the bacon offsets some of the sweetness and the combination is delicious. They’re also easy and fast to make.
Date, Rum, and Pecan Ice Cream
This is the perfect date ice cream. Ha ha…er, sorry about that. Ahem. Anyway, sweet dates and rum make a good duo, but having lived in San Francisco for many years, where it’s often whispered that there’s no better way to liven up a pairing than by adding a third element, I offer you this ménage à trois of flavors in one sybaritic ice cream. Be careful when heating the rum and dates: The rum can flame up, so keep an eye on the action before it gets too hot to handle.
Tamarind and Date Chutney
This tart-sweet relish is thick enough for you to plop some into the crevices of a samosa for a wonderful, classic Indian food taste treat. Tamarind is known as the “date of India,” and the delectable marriage of the two kinds of dates in this chutney is a natural. Both ingredients lend body, their flavors perfectly complementing each other. I’ve eaten this chutney off a spoon. If available, use jaggery (unrefined Indian sugar) or Southeast Asian palm sugar instead of the brown sugar. Sticky dark brown slabs of tamarind pulp are sold at Chinese, Indian, and Southeast Asian markets in a double layer of plastic packaging. Soft dates, such as Medjools, work best. Otherwise, soak chewy, hard dates in just-boiled water for about an hour to soften them, then drain and proceed.
Baked Apples with Ginger, Dates, and Walnuts
There are a lot of rather timid recipes for baked apples out there, but this one, packed with spicy ginger and sweet dates, is a twist on the usual homey fare. It’s a dessert that pleads to be topped with a scoop of ice cream that will melt from the warmth of the fruit. These apples also make an eye-opening breakfast when you’re weary of the same old eggs-and-toast routine. If you’re anything like me, you’re not at your peak in the morning, so bake them the night before, then rewarm them while the coffee is brewing. At breakfast, ice cream is optional.
Brazil Nut, Date, and Fresh Ginger Tart
I tried to explain to some French pals what a “treehugger” is, a term that we Americans jokingly use to refer to a person who participates in well-intentioned earth-saving activities. Judging from my friends’ baffled expressions, the meaning got lost in translation. There are now a few French people wandering around scratching their heads, puzzled about nutty Americans with a penchant for wrapping their arms around tree trunks. I’m guilty of hugging a few trees myself. I read that using Brazil nuts is something positive that we can do to help sustain the rain forests, so I came up with this tart, which is packed full of them. I can’t say you’ll feel better about saving the planet if you make it, but anyone who doesn’t give it a try is, in my opinion, definitely nuts.
Date-Nut Torte
I’ve been unable to master Arabic, so I have no idea if there’s a translation for the phrase “snack cake.” My mother, who was half Syrian (and never mastered Arabic either), often made this cake for me when I was a kid. As an adult, I frequently find myself craving a piece for a snack. Or whatever a between-meal nibble is called. When I got the recipe from her, I read it through and noticed there wasn’t any butter in the cake. I figured it was probably a mistake, but when I baked it up, I found that no butter was necessary—the cake simply didn’t need it. It does benefit from a very generous dusting of powdered sugar, which can be a little messy, but part of the fun of Middle Eastern desserts is licking your sugary fingers after you’ve polished off the last bite.
Kumquat Sticky Toffee Puddings
During a baking demonstration, I once inadvertently blurted out, “I don’t like sweet things,” at which point the room erupted with laughter. I didn’t quite see what was so funny until someone pointed out that I was making desserts. Well, yes. I was. But it’s true—I don’t really like oversweet desserts. I adore caramel and toffee more than anyone, but I like them paired with something to balance the sweetness. Sticky toffee pudding is the Holy Grail for toffee lovers. My version is topped with slices of kumquats as a puckery counterpoint to the gooey-rich sweet toffee.
Spiced Pumpkin Date Pie
This is a new take on an old favorite. Dates add great flavor and texture to the creamy spiced filling in this vegan pie. The nutty pecan crust is the perfect contrast to the velvety smooth pumpkin filling. Don’t wait until Thanksgiving to try this one!
Date Nut Squares
These are my all-time favorite bars; I just love dates and nuts together. These bars have a crumbly texture with a creamy date center enhanced by raspberry juice.

This is the best vegan banana bread ever—super moist and deliciously sweet from the dates.
Zucchini Date Muffins
I keep a batch of these low-fat muffins in my freezer at all times. They stand in as cupcakes when my daughter, Sofia, asks, “What’s for dessert?” For a quick and easy low-fat frosting, spread a little Greek-style yogurt over the top, drizzle with agave nectar, and add a sprinkle of cinnamon. Perfect!
Wendy’s Date Nut Truffles
One day my coauthor, Mat, was reminiscing to his mom, Clair, about an ice cream store he worked at while in college. “I told her that I got so sick of ice cream that for two years after I quit I couldn’t go near it.” At which point Clair mentioned that as a girl she worked for years at the chocolate counter at Gimbel’s, one of New York’s famous retailers. Gimbel’s let you eat as much chocolate as you liked on the job, so long as you didn’t take any home. “I asked Mom if she ever got sick of chocolate. She just looked at me like I was nuts and said, ‘Why would I?’” Which brings us to these little morsels. For chocolate aficionados, nothing provides a better fix than a truffle. My friend Wendy, an incredible chocolatier, designed these confections from a scrumptious mélange of chocolate, dates, orange zest, and ground nuts, all rolled in coconut. I could tell you that the reason to eat these is because they’re high in protein and phytochemicals, but how ‘bout we just call that a nice side benefit of yum! Since you’re going to indulge in a chocolate dessert, be sure to make it the best by using high-quality chocolate.
Baked Apples Filled with Dates and Pecans
When I told my friend about this baked apple dish, he said it reminded him of an old folk recipe. When he was little and had an upset tummy, his Russian grandmother would cut up an apple and leave it out on the counter for a few minutes, until it began to brown. His grandmother would then say, “Come eat, tatellah” (an affectionate way of saying, “little man” in Yiddish). Lo and behold, a few minutes later his stomach felt better. He always figured it was love at work (and, of course, it was), but years later he found out there was also some science involved: As they brown—or cook, in this case—apples release pectin, which naturally soothes the belly. Baking makes the pectin and the rest of the apple easier to digest. In this recipe, the apples are complemented by a whole host of tasty morsels and spices—toasted pecans, dates, orange zest, and cinnamon—and as they bake, they smell heavenly.
Anytime Bars
The whole idea of Anytime Bars is right in the name; you never know when hunger is going to strike, and you want to be ready to take advantage of those moments to nourish yourself. A lot of my clients take these portable packets of pleasure to chemo sessions. It may seem odd that people want to eat during treatment, but many do, and these bars are a delicious, healthy alternative to the bowls of sweets so often found around infusion centers. The great thing about this recipe is that you can change the ingredients to fit your taste preferences. You can even split the batter and make half with currant and cranberries and the other half with walnuts or whatever you’d like. These bars come together very quickly with the food processor, but if you don’t have one, you can certainly chop the fruit and nuts by hand.
Amaranth Date Bread
This simple quick bread is one of my favorites. It’s wholesome and subtly sweet. Whole-grain amaranth has a nutty flavor, adds great texture, and is packed with protein and fiber.
Banana Pecan Cupcakes
Light and nutty, these purely fruit-sweetened cupcakes are perfect with brunch, and quite the showstopper smothered with Whipped Cream Frosting (page 93) or Banana Whipped Cream Frosting (page 93).
Raspberry Cheesecake Cupcakes
Made with goat cheese and raspberry jam, these healthy yet decadent mini cheesecakes are scrumptiously satisfying. Take note that they puff when baked and settle as they cool. Try experimenting with different flavors of jam, such as orange, cherry, or apricot. This is my boys’ favorite dessert and they ask me to make it quite often.
Granny Haley’s Orange Date Cake
This recipe was a favorite of Sandy’s Granny Haley. Sandy remembers how Granny Haley would serve this cake whenever anyone would come by for a Sunday afternoon visit over coffee or tea. The subtly sweet cake was the perfect snack and accompaniment to their ever sweeter conversation. Most people don’t have sour milk on hand, so here’s a simple way to make some. Combine 2/3 cup milk and 2/3 teaspoon white vinegar or lemon juice, and let it sit for 10 minutes before using.
Sweet Potato Cake
Here, I’ve created my version of sweet potato pie, but it’s not as heavy and not as sweet. The cranberry foam gives a nice added pop of acidity.
Dangerous Date Dots
These easy, no-bake candies are good for you if you eat only two or three, which is dangerously difficult to do. You’ll find a balance between the natural sweetness of dates and honey and the bitterness of rich cocoa.
