Grilled Bacon and Cheese Jalapeño Poppers

Cheese, peppers, bacon, grill . . . This is a winning combo that will steal the fire from anything else you have going on. Well, except maybe the Super Bowl, which it will make just that much better. Serve it anytime you’ve got a group of buddies coming over, which, for Bobby, is nearly every night. We love these with our ultimate rib steak and also with All-Day Beef Chili (page 122).

Texas Migas

If you have ever had breakfast in Texas, then odds are you’ve experienced a plate of delicious migas, a mixture of fluffy eggs, spices, cheese, and fried tortillas. For Sandy, migas present somewhat of a love-hate relationship. You see, Michael (her main squeeze for over twelve years) loves migas so much she sometimes feels he loves them more than her. He’s tried them in every restaurant in Austin, always noting the subtle differences and what would make the perfect combination of flavors. She took note and developed this recipe in attempts of satisfying her “migas man.” And let’s just say there is no longer any doubt who Michael loves more. Serve these with a side of refried beans and your choice of corn, flour, or whole wheat tortillas to enfold all of the ingredients into tasty tacos. And if you’re feeling spicy, try making your own pickled jalapeños (see below).

Tortilla Soup

My friends request this recipe more often than any other. I am often asked if it’s a family recipe. I take it as a compliment that people always seem so surprised to hear that I found it in a magazine when I was about twelve years old. I’ve made it so many times since then and it has evolved into what it is today. I think it’s so delicious—and popular!—because of its clear but very flavorful broth. So often tortilla soup is heavy, but this one is hearty without being unpleasantly thick. In fact, I make such a large batch because everyone always wants seconds and thirds. On the rare occasions that I’ve had leftovers, I’ve discovered that the soup keeps very well, and even gets better, stored in a tightly covered container in the refrigerator. The garnishes keep well stored in zip-top bags; keep the fried tortilla strips at room temperature and everything else in the refrigerator. When serving the second day, just place all the garnishes at the bottom of the bowl and ladle the soup over. I use two kinds of dried chiles—ancho and pasilla—because they add more depth and smoky notes to the broth. Use more or fewer chiles depending on how strong you want their flavor to be. Almond Braised Lamb Shanks with Toasted Almond Salad

This out-of-the-ordinary stew is seriously good and its enticing aroma seductive. The sauce is smooth and complex: cinnamon, mustard, cumin, fenugreek, and cardamom all add up to an intriguing flavor that really lingers. The parsley-almond garnish adds brightness to the dish. Sweet, nutty, and crunchy, with layers of Indian spices, this killer recipe is a musttry. Serve it over basmati rice.

Braised Chicken with Apricots, Green Olives, and Herbed Couscous

A departure from classic chicken stew, this one-pot wonder with Middle Eastern flair is a little bit exotic but not off-putting or difficult to make in the slightest. In fact, my kids love it. The sweet apricots and salty olives play nicely off each other and collide under a shower of cilantro to jack up the flavor even more. The recipe should make a little extra for leftovers, which are even better the next day.

Falafel with Tahini Sauce

Falafel, usually tucked into pita bread with lettuce, tomato, and tahini sauce, is one of the best-known Middle Eastern street foods. At home, falafels make a rustic hot hors d’oeuvre, with a bowl of creamy tahini sauce for dipping. These fry up just right: crunchy on the outside and fluffy in the middle. The baking powder gives the falafels a little lift so they don’t sit in your stomach like belly bombs! All the fresh herbs make for a vibrant flavor and super green color. The chickpeas need to soak for a bit, so plan accordingly. The falafels are amazing with Quick Pickled Vegetables (page 235).

Crispy Pan-Fried Catfish with Hot Slaw

Frying fish in peanut oil (like using lard for fried chicken) gives catfish the crispiest, least greasy coating imaginable.

Shrimp, Pea, and Rice Stew

The simplest way to enjoy wild shrimp is to cook them fast and serve them warm, still in their shells, with melted butter. This recipe takes the opposite but equally flavorful tack: the shrimp are slow-cooked, infusing the entire soup with sweet shrimpiness.

Smoked Leg Quarters with Fresh Herbs

Nine times out of ten when chicken is ordered in a restaurant, a breast will arrive at the table. Where is the love for dark meat? To my mind there is no comparison between the depth of flavors of dark meat versus white meat. On top of that, chicken legs and thighs stay moister and more tender and have a greater margin of error when cooking. For those reasons most competitive barbecuers prefer to submit dark meat rather than chicken breast to trained judges. For marinating chicken it is hard to beat a traditional Italian dressing. The marinade in this recipe stays close to this philosophy while adding a fresh punch with mixed herbs. Its earthy acidic profile complements the subtle smoke flavor of the chicken; there is nothing out-of-the-bottle about it.
