Mâche, Frisée, and Radish Salad with Mustard Vinaigrette

Veal in Switzerland often presupposes sauerkraut, but we prefer a lighter take. With crunchy radishes and bitter frisée, this salad brings its vinegar note in the form of a spicy mustard dressing.

Seared Scallops with Creamy Noodles and Peas

Scallops halved horizontally cook fast and make a meaty, substantial meal — especially when accompanied by this rich white-wine sauce studded with peas and chopped chives.

Porcini-Crusted Filet Mignon with Fresh Herb Butter

Ground dried mushrooms become a flavorful crust for the steaks.

Cold Cucumber Sauce

Editor's note: The recipe and introductory text below are from Jasper White's The Summer Shack Cookbook: The Complete Guide to Shore Food. To read Epicurious's review of the cookbook, go to Summer Cooking Guides. This is one of my favorite sauces for grilled seafood, especially swordfish. It is also terrific with salmon, striped bass, halibut, tautog, and other white-fleshed fish suitable for grilling. Think of this recipe as a formula. The ratio of cucumber to the other ingredients is important, but from there you can adapt this sauce to match with different fish or even side dishes. For example, with a Latino or Caribbean dish like Black Beans and Rice, you could substitute fresh lime juice for the lemon juice and add chiles and cilantro. This recipe uses half yogurt and half sour cream, but you could use any combination of the two. Or, for salmon, you might want to use all sour cream, with dill. You could also make a low-calorie sauce using all low-fat yogurt. The first time you make the sauce, if you follow my guidelines but omit the jalapeño and use parsley and chives for the herbs, you will have a basic sauce. After that, you are on your own. The list of possible variations is extensive. For equipment, you will need a stainless steel (or plastic) strainer.

Salmon Steaks with Littleneck Clams and Saffron-Mint Broth

This recipe was created by chef Michael Kornick of MK Restaurant in Chicago. It's part of a special menu he created for Epicurious's Wine.Dine.Donate program.

Poached Eggs with Roasted Asparagus, Prosciutto, and Chive Oil

The chive oil would also be delicious drizzled over salmon or chicken. For very hungry guests, poach 12 eggs and serve each person two instead of one. WHAT TO DRINK: Prosecco, an Italian sparkler, is festive, delicious, and a good value.

Slow Cooker Potato, Cheddar, and Chive Soup

The combination of potatoes and cheese just can't be beat, especially here, in this rich, filling soup.

Caramelized-Onion Flatbreads with Crème Fraîche

This clever appetizer is halfway between a pizza and a flatbread.

Chicken Salad with Roasted Red Peppers

Editor's note: The recipe and introductory text below are from The Skinny: How to Fit into Your Little Black Dress Forever by Melissa Clark and Robin Aronson. Dressed with roasted red peppers, olive oil, mustard, and garlic instead of the usual bland mayonnaise, this chicken salad packs a punch. It's great made into a sandwich for lunch at the office. Or if bread isn't on your menu, serve the chicken salad on a bed of greens tossed with a little olive oil and sprinkled with salt.

Horseradish Cream Sauce

Chicory, Fried Ham, and Pear Salad

Substituting fried ham for bacon is a great use of everyday deli meat. The sweet pears mellow chicory's pleasant bitterness.

Jumbo Shrimp with Chive Butter

The chive butter is a breeze to make, and it works overtime: First it's used to baste the shrimp, later it becomes the sauce.

Roasted Beets and Baby Greens with Corinader Vinaigrette and Cilantro Pesto

Our youth culture has even reached the green market: Baby vegetables are among the most sought-after produce, whether we buy them because they are sweeter and more tender than their full-grown counterparts or just because they look great on the plate. Seek out golden yellow, chioggia (an Italian heirloom variety that has white and pink rings inside), and Albino beets at farmers' markets.

Bresaola Carpaccio with Gribiche Vinaigrette

Bresaola-a beef lover's prosciutto equivalent-gives this virtually no-cook dish a bright platform with deep flavor.

Broiled Bluefish with Tomato and Herbs

A fresh summer catch from the Atlantic and Gulf coasts, bluefish has a rich, fine-textured flesh that makes it perfect for baking, broiling, or grilling.
