Chicken Marsala

The Marsala and fennel seeds give this recipe the familiar flavor of the classic dish, while the red pepper flakes add a bit of a kick. If you are a fennel fan, double the amount given here. You can grind fennel seeds in a mortar or purchase the spice already ground. Feel free to use any type of fresh or dried mushrooms. Cut dried mushrooms into thin pieces to be certain they will hydrate enough. To presoften particularly thick dried mushrooms, soak them in boiling water for 15 minutes before draining, chopping, and adding to the pot.

California Chicken

In a pinch, substitute a drained can of diced tomatoes for fresh and any kind of wine for the dry sherry. For light and fluffy couscous, fluff it with a fork and let sit for a few minutes before eating. An easy way to peel an avocado is to halve it lengthwise and remove the pit by striking it firmly with the blade of a knife and twisting slightly to loosen. Then, make a few lengthwise cuts and a few cuts across, making sure not to pierce the skin. Push the avocado inside out and effortlessly knock the cubes of flesh from the skin.

Chicken Cacciatore

This is an easy dish, perfect both for chilly nights and for when you have an abundance of vegetables. Cacciatore means “hunter” in Italian. This is the dish hunters would make from whatever was available after a day of hunting and foraging. Use any vegetables you wish—try cubed eggplant, sliced carrots, green beans, spinach, broccoli, cauliflower florets. Orzo is rice-shaped pasta, but bow ties (farfalle) also work well in this meal. For a heartier flavor, substitute dry white wine for the water plus part of the tomato liquid, and use chicken on the bone. If using fresh herbs instead of dried, use one tablespoon of each.

Chicken Marbella

This was a popular and exotic dinner party recipe in the “mod” 1960s. My mother-in-law made the traditional version for us recently, and though my husband typically doesn’t like fruit with meat, even he licked his plate clean! I cut the amount of brown sugar called for in the original version immensely because I feel the prunes add a lot of sweetness. You could even omit the sugar entirely and still enjoy a sweet-tasting meal.

Bahamian Chicken

The spicy tropical tastes of the Bahamas can be yours without leaving home! As in all the recipes, there’s no need to peel the potatoes; in fact, the skin is the most nutritious part, so save yourself the trouble and leave it on. And try this meal with sweet potatoes rather than white, or substitute pork for the chicken. Use seitan (a wheat product found near the tofu in the refrigerated section of your health food store) for a vegetarian alternative.

African Peanut Butter Stew

Once, when I was visiting Paris, my friend Emile from Gabon, Africa, made this dish for me. I was amazed that cooking with peanut butter could be so good.

Braised Chicken with Peppers and Mushrooms

Cooking chicken with mushrooms gives you such a nice intense and meaty-tasting broth. Along with meltingly soft bell peppers and onions, this throw-it-all-in-the-pot stew has wonderful Italian flavor. We love it over buttered noodles.

Baked Chicken with Zucchini and Herbs

Baking chicken on top of zucchini is a great way to get your green vegetables in. The zucchini absorbs all the chicken and herb flavors in the pan and winds up tasting a whole lot better than any vegetable really should. We love to bake chicken pieces with a slice of lemon on top because the lemon browns right along with the chicken skin and adds a nice zesty flavor.

Chicken Breast (or Leg-Thigh Pieces) Sautéed

People often asked me, as I was writing this book, What should I do with chicken breasts? I think they want to cook chicken breasts because they are lean (therefore supposedly good for you) and quick to prepare, but there’s that persistent problem that there are inevitably two to a package, too much for a single meal. Frankly, I see that not as a problem but as an asset, because, again, you have something to play with for a second round. Here is a basic recipe for cooking the chicken so that it is flavorful and not dried out; it can be varied in as many ways as there are vegetables in season. I confess that I prefer dark chicken meat over light; if you feel the same way, just substitute two leg-thigh pieces for the breast meat, and cook about 5 minutes longer.

Braised Chicken Thighs with Mushrooms & Almond Purée

I LOOOOOVE dark meat chicken! Especially chicken thighs—they’re succulent and delicious, the perfect portion size (two thighs per person), and they’re cheap. I also love nuts. In this recipe I put these two ingredients together and take the humble chicken thigh to a totally new level. I braise these lovelies with lots of mushrooms and then thicken the sauce with toasted almond purée. The result is a dish that is surprisingly rich and, thanks to the nuts, has an excellent mouthfeel. It’s definitely one of the best recipes I’ve ever come up with.

Hungarian Paprika Chicken

My fabulous hairdresser on the set of Desperate Housewives, Gabor, shared this recipe with me. In fact, he shared the very recipe his grandmother had used for decades—the card it was on must have been about eighty years old and was written in Hungarian! It took Gabor some time to decipher it, but I’m grateful for his efforts. It’s so delicious! It’s funny to think that almost every culture has some variation on the big pot of fragrant, nourishing stew. I’m glad to have been introduced to this one. The bell peppers add sweetness and color; the dish is really beautiful when made with green, red, yellow, and orange peppers, but feel free to use whatever you prefer or can get your hands on. The stew is amazing served over buttered egg noodles. And don’t worry about leftovers; this is even better after sitting in the fridge for a day or two.

Chicken with Caramelized Shallots and Shiitake-Wine Sauce

This is a perfect autumn dish, full of rich flavor and deep color. Be sure to really press down on the chicken when you add it to the pan to help the shallots and green onions stick to the skin and form a sort of caramelized onion crust. I prefer dark meat because it is generally juicier and more flavorful, but this method works very well with both dark and light meat.

Tortilla Soup

My friends request this recipe more often than any other. I am often asked if it’s a family recipe. I take it as a compliment that people always seem so surprised to hear that I found it in a magazine when I was about twelve years old. I’ve made it so many times since then and it has evolved into what it is today. I think it’s so delicious—and popular!—because of its clear but very flavorful broth. So often tortilla soup is heavy, but this one is hearty without being unpleasantly thick. In fact, I make such a large batch because everyone always wants seconds and thirds. On the rare occasions that I’ve had leftovers, I’ve discovered that the soup keeps very well, and even gets better, stored in a tightly covered container in the refrigerator. The garnishes keep well stored in zip-top bags; keep the fried tortilla strips at room temperature and everything else in the refrigerator. When serving the second day, just place all the garnishes at the bottom of the bowl and ladle the soup over. I use two kinds of dried chiles—ancho and pasilla—because they add more depth and smoky notes to the broth. Use more or fewer chiles depending on how strong you want their flavor to be. Braised Chicken with Apricots, Green Olives, and Herbed Couscous

A departure from classic chicken stew, this one-pot wonder with Middle Eastern flair is a little bit exotic but not off-putting or difficult to make in the slightest. In fact, my kids love it. The sweet apricots and salty olives play nicely off each other and collide under a shower of cilantro to jack up the flavor even more. The recipe should make a little extra for leftovers, which are even better the next day.
