Cannellini Bean
Pasta with White Beans, Pesto and Sun-Dried Tomatoes
"When I finished graduate school, I thought I’d have more time for one of my hobbies, cooking," says Catherine Verilli of Silver Springs, Maryland. "But now I’m busy teaching, researching and singing professionally. With my Italian heritage, I like to emphasize flavor, and my schedule often demands speed. This pasta dish meets both requirements beautifully."

Tuscan Vegetable Soup with White Beans and Parmesan
Cheryl Zook of Ketchum, Idaho, writes: "After I graduated from college last fall, I spent a few months in Europe. By far, my favorite stop was Florence. I'll always remember the vegetable soup I had at Ristorante Mamma Gina near the Ponte Vecchio."
This is almost as thick as a stew. If you prefer a thinner soup, simply add more vegetable stock. Because the beans need to soak overnight, begin preparation a day ahead.
Ditalini with Pesto, Beans, and Broccoli Rabe
Crusty bread and radicchio with creamy Italian dressing make nice sides. End with red grapes and anise-dusted sugar cookies.

Chicken Stew with Tomatoes and White Beans
"Because my family loves this hearty stew so much, I included it in a cookbook I put together for my children," Joy Smith, Glastonbury, Connecticut. "It makes a comforting meal on cold winter evenings here in Connecticut, and it's a convenient dish that freezes and reheats well."

Brandade, a specialty of Languedoc and Provence, inspired the following recipe. Also called brandade de morue ("ragout of cod"), it is classically a purée of salt cod, olive oil, and milk, often thickened with bread or potato.
Can be prepared in 45 minutes or less.
Cannellini and Macaroni Salad with Grilled Tomatoes, Basil, and Olives
Add a glass of rosé and some crusty Italian bread to make a perfect summer lunch.
Summer Minestrone with Pesto
When a generous garnish of pesto gets stirred in, the soup turns a vibrant green and becomes perfumed with the intense and sweet aroma of basil mixed with garlic.
Garlic Chicken and Peppers with Beans
One could cook this on the stove and reduce the time by 10 minutes, but oven baking gives the chicken time to thoroughly absorb the flavors of the pepper and garlic.
