Broccoli and Red Bell Pepper Salad
Bobby loves broccoli; Jamie loves bacon; Brooke loves pine nuts and dried cranberries; and everybody loves ranch dressing, so this salad just kind of “appeared” in the bowl one day when we were all feeling hungry. Also try it with Quick-’n’-Easy Chicken ’n’ Dumplings (page 131).
Bobby’s Tasty Steamed Broccoli with Garlic
Folks love this recipe, whether or not they’re broccoli fans. It’s dressed like a salad, with a nice little tang from the vinegar. It adds something green and healthy to meaty mains like this one, and we also love it with Mama’s Hamburger “Hobo Sacks” (page 7) and Smothered Pork Chops and Rice Bake (page 22).
Tortellini Tricolore Salad
This Italian-inspired salad uses fresh cheese tortellini as its base. (You can find fresh tortellini in the refrigerated section of your local supermarket.) It’s a fun variation on the usual pasta salad suspects. Plus, it’s superconvenient because you can fix it up to a day ahead and serve it straight from the fridge. We love the way tortellini and mozzarella taste when they’ve been marinating in Italian seasonings and how nice the colors of the broccoli, tomatoes, and olives look when they are served together. That’s why we call this salad tricolore (Italian for “three colors”)!
Bobby’s Favorite Beef Teriyaki Stir-fry with Broccoli and Peppers
We love how crisp and tasty the ingredients in this dish turn out when you stir-fry them. Stir-frying is a great way to make a healthy meal. And using fresh ginger adds an irresistible kick—as well as an aroma that will call everybody to the table. Put on a pot of white rice as you start cooking, and dinner will be as fast as it is flavorful.
Oh Boy! Broccoli Casserole
Helping kids everywhere learn to love broccoli! This classic broccoli, cheese, and rice casserole will quickly become a favorite in your family. (Maybe they’ll forget to complain about eating something green.)
Broccoli Cornbread
Sandy doesn’t even like cornbread, and yet this is one of her favorite dishes. If you weren’t one before, we’ll make a cornbread lover out of you, too. This dish is extremely easy to make and works great when paired with our CQ’s Royal Cottage Pie (page 38) or our Shrimply Delicious Shrimp and Grits (page 54). It also can stand proud all on its own, making a great appetizer or a replacement for the rolls in your bread basket!
Lunch Lady Doris’s Spicy Mac & Cheese
Who said macaroni and cheese is just for kids? It may have been during our adolescent days in the lunchroom where we fell in love with this all-American comfort dish, but this is not the macaroni and cheese of your childhood! Our version includes savory veggies, a rich medley of grown-up cheeses, and just enough cayenne to take this simple comfort food to a new gourmet delight. Makes a complete meal on its own or is a great side for just about anything, but we suggest serving it with some creamy tomato soup. Delish!
Chicken Divan Crêpes with Gruyère
Aunt Joan. Crystal’s aunt oozed charm and elegance. She always wore just the right dress or scarf. She was rarely without beautiful makeup and glam sunglasses. Her table was always set perfectly, and it was filled with foods that, for her young nieces, seemed exotic but tasty and comforting at the same time. The young ladies in Crystal’s family all grew up aspiring to be as lovely and sophisticated as Aunt Joan. We have modified Aunt Joan’s recipe for chicken divan by using it as a filling for crêpes. This recipe honors the beautiful and loving woman who graced so many lives and created so many special meals. Enjoy!
Stewed Zucchini with Tomatoes, Oregano & Pine Nuts
This dish reminds me of summertime as a kid. Growing up we had a vegetable garden and we always grew zucchini—one of those veggies that if you grow some, you get a ton. So my mom was constantly coming up with different ways to use all the zucchini we had hanging around—we had stuffed zucchini, grilled zucchini, zucchini bread, you name it. (I took more zucchini bread to my teachers at school than you can imagine!) This preparation of stewed zucchini was one my favorites. Zucchini with tomatoes and cheese . . . HELLO? What’s not to love???
Broccoli and Rice Casserole
This side dish is as easy to put together as it is tasty; my mom made it for us at least once a week. It packs lots of nutrition and flavor into a single dish, it is a very successful way to get kids to eat broccoli, and it is great to eat with so many things. Try it with Tilapia with Citrus-Garlic Sauce (page 74), Lemon Fried Chicken (page 80), or Meat Loaf (page 115). Any amount of butter works here. I tend to use a lot, but feel free to use less.
Grilled Broccoli with Parsley, Garlic, and Anchovies
Delicate fresh broccoli and cauliflower from a garden or small farm don’t resemble the useful California sorts that are a fixture in our produce drawer the rest of the year, and so we enjoy them while we can. But because broccoli and cauliflower do travel and keep exceptionally well, I make these recipes year-round, just allowing for slightly longer cooking times when dealing with more mature vegetables.
Broccoli Tomato Salad
This vitamin-rich salad pairs well with an unfussy egg dish, seafood, or cheesy pasta. It can be a very simple salad, or dress it up with extras and make it into a meal on its own.
