Refried Beans
Freshly rendered lard is the traditional fat for refried beans. Look for it at Latin American markets.
Black Beans with Soy
Soy-glazed black beans are a common panchan—little side dish—in Korea, but they’re also served in Japan; in both countries they’re usually served at room temperature. They are about as far from the cumin- and garlic-laced black beans of Mexico (see page 438) as they could be. In Asia, they’re made with black soybeans, which are larger and rounder than the more common black (“turtle”) beans you see everywhere. But you can use either. Serve this as if it were a little salad, with any Korean or Japanese cooked dish.
Feijoada
In Brazil, feijoada is a meat dish with beans. In Goa, another former colony of Portugal, it is a bean dish in which meat is optional. I have been served and prepared it with both kidney beans and black-eyed peas and prefer it with the latter. To serve more people, simply double the beans and increase the remaining ingredients slightly or add meat; it won’t be much more effort. Serve over rice and make this entirely in advance if you like; it will keep, refrigerated, for a couple of days. Other legumes you can prepare this way: kidney or other red beans, black beans.
Black Beans with Garlic and Cumin
The familiar version, served in Latin American restaurants everywhere. Leave the beans soupy if you plan to serve them over rice. Allow plenty of time, because black beans can take a while, and they’re best served quite soft. But by all means prepare them in advance if you can and reheat before serving. Epazote is a typical addition to black beans in Mexico, and it contributes a distinctive flavor, but the beans are just fine without it. Other legumes you can prepare this way: red beans, white beans.
Refried Beans
You can use precooked (or canned) beans here, and the total time will be a mere twenty minutes, but if you cook dried beans with the proper spicing to begin with, the ultimate dish will be somewhat better. The traditional medium for frying beans is lard and with good reason; it’s delicious. But you can also make wonderful refried beans with a combination of cumin and well-browned onion. Other legumes you can prepare this way: red beans are standard; neither black nor white beans are as common, but they work well.
Quick-Braised Fish Fillets in Black Bean Sauce
When you don’t have the time, energy, or inclination to braise a whole fish, try this simpler, faster version; the flavors are much the same. Serve this over rice.
Roasted Corn and Black Bean Salad
You can use canned black beans for this (you can even use frozen corn), but the salad is best with beans that have been cooked, with good spices, until tender but not mushy.
Rice and Beans, Korean Style
Every culture that relies on rice mixes other common ingredients into it, to boost both flavor and nutrition. Most people are familiar with Fried Rice (page 506) and Coconut Rice (page 516), but this recipe is quite different from those. If you make this dish with red beans only, use all the bean-cooking liquid for the rice; it will give it a lovely pink tinge.
Soupe au Pistou
Pistou is a garlic-basil paste almost identical to pesto—the names in fact are the same, just in different dialects. In France it’s used less to dress pasta than to thicken soups while heightening their flavor. Pistou is usually passed at the table so your guests can add as much as they like.
Red or Black Bean Dip
Like most other bean preparations, this is far better with beans you cook yourself than with canned (frozen beans, now available at many supermarkets, fall somewhere in the middle). But even with canned beans, it is so much better than commercially made bean dip you may never go back. If you cook the beans yourself, start with the recipe for Black Beans with Garlic and Cumin (you can cook red beans this way too), page 438, and cook them until they are quite soft. Reserve the cooking liquid. Serve with tortilla chips, toasted pita bread (not a traditional combination but a good one), or raw vegetables.
Spicy Black-Bean Cakes
Because these crispy bean cakes are broiled rather than fried, the recipe doesn’t call for much oil, so the cakes contain less fat; they are also easier to prepare than fried versions.
Tortilla and Black Bean Pie
Serve this brightly colored, layered tortilla pie with salsa and sour cream on the side. You can assemble the dish ahead of time, then bake it just before serving.
Black Bean and Corn Soft Tacos
We have two recipes for tacos in this book, which may seem repetitive, but the only similarity is the tortillas and cheese. This version has the great combo of black beans and corn, with a little bit of zip from the sauce.
Blue Corn Fried Eggs
A Mexican-inspired brunch is my favorite way to recover from a long night out, and this spin on huevos rancheros is how we serve it up at Bar Americain. This plate is layered with taste and texture, from the crisp, salty tortillas up to the cool and chunky guacamole on top. Savory black beans make this dish extra satisfying, while the chile sauces pump up the color—and heat. I like the slightly sweet, nutty flavor of blue corn tortillas, but if you can’t find them, yellow ones are an easy substitute.
Barbecued Baked Beans
What could be more American than a pot of baked beans? From “Beantown’s” own Boston baked beans to one of the South’s favorite sides for a plate of barbecue, baked beans are an integral part of our culinary heritage. Molasses is a traditional ingredient here; its dark, rich flavor and thick texture give the dish its characteristic sweetness and consistency. I use a little less than most folks and supplement it with a generous dose of honey to mellow it out and allow the rest of the flavorings—dark rum and barbecue sauce among them—to shine. My southwestern culinary leanings are what prompt me to use black beans. I like their somewhat firm texture, but you could certainly use traditional navy beans if you’d prefer. The fat and smoky flavor of bacon is essential. Double-smoked bacon gives you even more of that amazing taste.
Red Snapper Florida Style
Florida, and in particular the city of Miami, has been home to the vibrant culture of Cuban immigrants for generations. Their cuisine has put its stamp on the state and on this dish, where black beans, flavored with chipotle, are pureed into an earthy, slightly chunky sauce that makes the bed for red snapper fillets encrusted in a crisp shell of green plantains. Cool and spicy jalapeño crema and a relish of sweet mango and creamy avocado garnish the fish with tropical continuity.
