Olive Oil–Fried Egg with Roasted Asparagus and Parmesan
The affinity between asparagus and eggs is apparent to anyone who has ever enjoyed an asparagus omelet. But here’s another variation on that theme. Brian roasts the asparagus to concentrate their flavor, then tops them with fried farm eggs basted with sizzling olive oil. The edges of the egg white become lacy and crisp while the yolk remains runny. A sprinkling of Parmesan helps make the dish more wine compatible. Serve as a first course for a spring dinner party, or in larger portions for a weeknight supper. It’s best to fry only one egg at a time, but each one takes less than 30 seconds.
Peanut-Crusted Chicken Breasts
Here, peanuts lend a golden, crisp crust to chicken breasts—and because the dish is baked, there’s no need for a frying pan. Other nuts, such as pecans or walnuts, can be used instead. Blanched asparagus, tossed with butter and lemon zest, rounds out the dish.
Pasta with Goat Cheese and Roasted Asparagus
This creamy no-cook sauce is very simple: Whisk together goat cheese, reserved pasta water, and butter, and toss with pasta and roasted asparagus. The corkscrew shape of cavatappi is just right for cradling the sauce.

WHY IT’S LIGHT In this recipe, the steak and vegetables are cooked on the stove, with just one tablespoon of oil for the whole dish. Because flank steak is one of the leanest cuts of beef, be careful not to overcook it, and slice the meat thinly against the grain for the most tender results.
Spring-Vegetable Couscous with Chicken
FLAVOR BOOSTERS This one-dish meal is a great example of how the bright notes of lemon (zest and juice) and parsley can help reduce the need for unwanted fat. The recipe is very adaptable; if you have other vegetables such as fresh spinach or snap peas on hand, add them to the couscous at the end. You can also substitute the leg and thigh meat from a rotisserie chicken.
Polenta Wedges with Asparagus and Mushrooms
WHY IT’S LIGHT Wedges of polenta are lightly brushed with olive oil and broiled instead of fried. The asparagus spears are broiled alongside the polenta, and a small amount of cream is all it takes to make the mushrooms taste luxurious.
Cooking Asparagus
Asparagus comes in three colors: green, purple, and white. The green and purple varieties taste very much the same and the purple, when cooked, turns dark green. White asparagus, which doesn’t turn green because it is grown protected from the sun, is much more rare and expensive, and it has a milder flavor. Asparagus is best when the tips (the blossom ends) are tightly closed, and its flavor is sweetest when freshly harvested. Look for smooth-skinned, brightly colored spears with fresh (not dried-out looking) cut ends and compact tips. To prepare asparagus, grasp each spear and bend it until it snaps. The spear will break at the natural point where it becomes tender. I prefer fat asparagus stalks to thin ones because once they are peeled they are sweeter and less grassy-tasting than the skinny ones. The trick is to use a peeler that removes paper-thin layers of skin, exposing pale green flesh, not white. This is unnecessary if the spears are quite thin, or if they are going to be cut into small pieces. Start about 1 inch below the blossom tip and peel down along the spear towards the cut end.
Green Pea and Asparagus Ragout
Shelling peas (or English peas), snap peas, and snow peas are the three most common varieties. Shelling peas are shelled, and only the peas within are eaten. Snap peas and snow peas are eaten pod and all. The tender shoots or tips of the pea vines are good to eat as well. All peas taste best when harvested while young and tender. They are the sweetest at this stage, as the sugars have not yet transformed to starch. Shelling peas have a very short season; they are only around while the cool weather of spring is here. Snap peas and snow peas can tolerate a bit of heat and will last into the early summer. Select peas that are vibrant and firm, with shiny pods. When very fresh the pods will actually squeak as they are rubbed together. Smaller peas of any variety will be tastier than larger ones. The edible-pod varieties, especially snow peas, are best when the peas are tiny, almost undeveloped. As they mature and become too stringy to eat whole, sugar snap peas can be shucked like shelling peas. To prepare snap and snow peas, snap back each end and pull it down the side of the pod to remove any strings. Pea shoots need only to be picked over for any yellow leaves and then rinsed and drained before being sautéed or steamed.

Grilled Asparagus and Melon Salad
This salad is a new twist on the classic combo of melon and prosciutto. Grilled asparagus keeps a slight crunch and also has a smoky char to it that pairs with the creaminess and subtle flavor of mozzarella and the fruitiness of melon. To top it off: crumbled prosciutto. I’ve always loved the salty tang of prosciutto, but since I started baking thin slices of it to make brittle, crispy chips, my love has become a full-blown obsession; they just seem to make everything taste better.
Pasta, Risotto Style
Why not cook pasta as you do risotto? That is, add broth a bit at a time and stir frequently, with the goal being a creamy, quickly made pasta (no waiting for the requisite gallon of water to boil!) that requires only marginally more attention than the standard variety. The concept is simple, it makes sense—pasta, like Arborio and other rices used for risotto, is plenty starchy enough—and it takes just the use of good-quality stock and a vegetable to make the dish delicious. If you’re using canned stock and have a little time, heat it with an onion, a carrot, and a garlic clove before beginning to add it to the pasta. And don’t salt the dish until you’re finished cooking; canned stock can be overly salty.
Grilled Asparagus with Lemon Dressing
This preparation favors thick spears of asparagus, which become tender and remain moist inside while their exteriors char. Those that weigh an ounce or two each—that is, eight to sixteen per pound are the best. The only difference between thick and pencil asparagus is that thick asparagus must be peeled before cooking to remove the relatively tough skin; use a vegetable peeler or paring knife.
Roasted Asparagus with Parmesan
There are two things I love about pencil-thin asparagus: one is that it requires no peeling, because its outer sheath is far more tender than that of its thick cousin; the other is that it cooks much faster. This is especially important when you turn to methods other than boiling or steaming—most notably roasting. What I like to do is roast thin spears until they’re just about tender, then top them with a foolproof two-ingredient topping: coarse bread crumbs and Parmigiano-Reggiano cheese. Run that under the broiler, and you get roasted asparagus with a crunchy, high-impact crust. Keep your eye on the dish while it’s under the broiler—the time needed there is only a minute or two.
Pan-Roasted Asparagus Soup with Tarragon
Asparagus is one of the few vegetables that remains true to its season; though you can buy it earlier than ever, and it stays around later than ever, it’s still pretty much a spring vegetable. You can save yourself some time by using thin asparagus; if you use thicker stalks, peel them first or the soup will be fibrous. Be especially careful whenever you puree hot liquid; do it in smaller batches to avoid spattering.
Stir-Fried Pork with Asparagus
If you like a really strong garlic flavor, reserve half of the garlic and stir it in at the end of the cooking, along with the optional sesame oil. Serve with rice. Other cuts of meat you can use here: beef, preferably sirloin; lamb, preferably from the shoulder or leg; boneless chicken; shrimp (which will cook more quickly).
Steamed Asparagus with Sauce Gribiche
Plain vinaigrette is lovely over steamed vegetables (or poached or grilled fish for that matter), but gribiche surpasses it. Just the thought of this bistro classic makes my mouth water. Other vegetables you can prepare this way: any vegetable you can steam and sauce—potatoes, broccoli, and carrots, for example.
