Orecchiette with Artichokes and Bacon
The artichoke is in the thistle family. One medium to large artichoke will yield approximately 2 ounces of delicious edible flesh. An artichoke is fresh when it squeaks as you squeeze it, and feels heavy in your hand for its size. Look for a deep olive green on the outside, and pale tender green on the inside of the petals. Artichokes will last fresh about a week. To store them, sprinkle them with cold water, and refrigerate in an airtight bag. Wash only before using. Italians have endless ways to enjoy artichokes, but I love them in this pasta dish with a little bacon added, a perfect harmony.
Braised Artichokes
The love Italians have for the artichoke is evident at the table. It is also evident as you visit markets in Italy, when you search through the pickled and canned vegetables in the Italian section of specialty stores in America, and when you consider the endless number of recipes dedicated to this thistle.
Stuffed Artichokes
Italians love their artichokes in a thousand ways, and stuffed with seasoned bread crumbs is a favorite. This recipe is an Italian American rendition, much richer and with more stuffing and ingredients than the one found in Italy. It was often an appetizer on the menu of Italian American restaurants in the 1950s, ’60s, and ’70s, and most likely the first way that many Americans tasted artichokes Italian-style. And I am sure the charm of it was the discovery of how to eat this curious thistle with not much pulp but lots of flavor.
Artichoke and Chickpea Salad
When you think you have nothing to eat or serve, look in your cupboard. Providing that you have shopped for these Italian ingredients (most of them in a can or jar), you can make this delicious and nutritious salad in no time. I like it best at room temperature. It is a great appetizer, but it becomes a meal when topped with some grilled chicken or a can of tuna.
Artichoke Soup
I got this recipe from Guido Pezzini, the patriarch at Pezzini Farms in Castroville, California, who claims that just about every dish his mother cooked included artichokes in some form. This soup is one of his favorites. The Pezzinis are a delightful and caring family, with Sean, the grandson, as the next generation in training.
Fried Marinated Artichokes
I have made fried artichokes many ways before, but I found this recipe at Liuzza’s in New Orleans different and quite tasty. The interesting part is that the recipe is made with jarred or canned artichokes. The batter is light and fries up crispy, while the artichokes remain tender and tasty. This is an ideal recipe to serve when unexpected guests arrive and all you have is a can of artichoke hearts in the cupboard and a beer in the fridge.
Celery, Artichoke, and Mortadella Salad
In creating this recipe, I added the mortadella on the spur of the moment. I love raw artichoke salad, but have often prepared this salad with many other, different ingredients, such as raw mushrooms, or shavings of Grana Padano or Parmigiano-Reggiano. Recently I made a beautiful salad of small artichokes, crunchy celery, and some great imported mortadella, which I happened to have on hand. And so this salad was born: it certainly is based on tradition, but with my own touch. It has now become a family favorite for buffets, antipasto, or just for lunch.
Celery and Artichoke Salad with Shavings of Parmigiano-Reggiano
Celery is often underappreciated as a principal salad ingredient. The inner stalks of the head have a wonderful freshness, flavor, and delicacy when thinly sliced. Here I’ve paired them with fresh baby artichoke slices in a salad with lots of bright, subtle flavors and all kinds of crunch. Shards of hard cheese—either Parmigiano-Reggiano or Grana Padano—lend even more complexity to the mix. Use only firm and very small artichokes for this: they should feel tight and almost squeak when you squeeze them, and they should have no choke.
Monkfish in Brodetto with Artichokes
Monkfish, meaty and firm, is well suited for the fast-cooking technique of browning and braising that I use in all my seafood brodetti. This one features fresh artichokes as a foil for the sweet fish—with other bright notes from capers, wine, and a healthy dose of peperoncino. A fish dish that does not suffer from overcooking, it can be prepared even the day before. Just reheat, bringing it back to a boil. If you have any leftovers, monkfish brodetto makes a wonderful risotto the next day. Serve with some grilled country bread. I also like it with polenta.
Chicken with Artichokes
Chicken braised in tomato sauce is always good, but it’s especially flavorful when chunks of fresh young artichokes are added to the cooking pot. You can serve this with polenta, mashed potatoes, rice, or anything that will sop up the sauce. Some slices of grilled country bread are my favorite, particularly on a summer day. The dish tastes even better if it is cooked in advance and then allowed to cool and rest in the pot. Reheat just before serving. If you have some left over, try pulling the remaining chicken off the bone and returning it to the sauce, and bringing it to the boil; after letting it all cook for a few minutes, you have a great dressing for pasta. I like rigatoni or shells with this.
Roasted Potatoes and Artichokes
Everyone loves roasted potatoes, and here they are tossed with slivered artichokes (already skillet-cooked with onion and garlic), lots of fresh oregano, and extra-virgin olive oil. It is a completely vegetarian dish full of flavor that will transport your table to the Seven Hills. Serve with grilled fish or meat, especially grilled lamb chops. Or simply turn this dish into a crispy baked treat by adding some shredded young Pecorino Romano, spreading it over the potatoes and artichokes in the last 5 minutes of baking.
Artichokes Braised in Tomato Sauce
This dish accents the meatiness of the artichoke. Braised slowly with the tomatoes, it develops a harmonious flavor, sweet with a refreshing licorice finish. Since this recipe calls for a lot of artichokes, I make it when they are plentiful. Serve with a piece of grilled meat or fish, or make some extra to spread on bread as an appetizer. Use as a dressing for pasta, or to make a risotto. These braised artichokes can be frozen, so make a big batch to pull out when unexpected guests come by.
Roasted Fingerling Potatoes and Artichokes with Garlic and Thyme
This dish is one of the simple joys that comes from freshly dug new potatoes and the inimitable artichoke. You need nothing more than garlic and a hit of thyme to create a side that totally speaks of the earth and that would make even a simple grilled steak sublime.
Shaved Artichoke and Wild Watercress Salad
Wild watercress appears sporadically in farmers’ markets, but it also grows in more places than you might think. In Seattle, it’s positively thick around Lake Washington and easy to find and pick. Whether you forage for your own or buy it from a purveyor, make sure you pick or buy more than you think you’ll need. I like to use only the very freshest tips and bits for the salad. The peppery flavor is a nice contrast to the mild, grassy flavor of the pecorino and marries well with the earthy finish of the artichokes.
Artichoke Risotto
I’ve met a lot of people who are so intimidated by the process it takes to extract the luscious heart from a large thistle that they never go any further with the artichoke than steaming it and melting some butter. There’s nothing wrong with that approach—it’s good eating, for sure—but it does keep you from enjoying a host of dishes that allow this regal vegetable to play a more suave, starring role. The single most common mistake people make when they prep an artichoke is to use a dull knife. Not only home cooks make that mistake, either. I’ve seen professionals prep artichokes so they look like they went through the dryer. Take a steel to your knife and follow the directions carefully, and prepping the hearts should be a breeze, giving you the star ingredient for a lovely spring risotto. This risotto takes a bit more liquid than some others in the book because the artichokes absorb some as they cook. Make sure the butter you add to finish the dish is cold, so it incorporates and adds richness and body.
