Sweet Potato and Chipotle Soup
GOOD TO KNOW Puréed vegetables give soup the same sort of velvety consistency that cream does. Vegetables like sweet potatoes, because of their starch content, also lend body to soups and stews.
Bar Americain Barbecue Sauce
This Southwest-inspired house barbecue sauce is used on its own or as the base of many sauces at Bar Americain. It is slightly sweet from the molasses, honey, and brown sugar and slightly earthy from the dried red chiles. It is the perfect sauce slathered on smoked ribs (page 149), or spiced up and spooned onto grilled oysters on the half shell (page 72). Adding bourbon transports this sauce from Sante Fe to Kentucky in a matter of minutes.
Barbecued Baked Beans
What could be more American than a pot of baked beans? From “Beantown’s” own Boston baked beans to one of the South’s favorite sides for a plate of barbecue, baked beans are an integral part of our culinary heritage. Molasses is a traditional ingredient here; its dark, rich flavor and thick texture give the dish its characteristic sweetness and consistency. I use a little less than most folks and supplement it with a generous dose of honey to mellow it out and allow the rest of the flavorings—dark rum and barbecue sauce among them—to shine. My southwestern culinary leanings are what prompt me to use black beans. I like their somewhat firm texture, but you could certainly use traditional navy beans if you’d prefer. The fat and smoky flavor of bacon is essential. Double-smoked bacon gives you even more of that amazing taste.
Shrimp-Tomatillo Cocktail
Horseradish is the common link between the ketchup-based cocktail sauce you are used to and this, its Bar Americain reincarnation. Tart tomatillos are roasted and blended with garlic, red onion, jalapeños, and cilantro for a sauce indebted to the flavors of the American Southwest. The secret to its bright green hue is the addition of blanched and chopped spinach—the flavor isn’t noticeable, but the color certainly is.
Chicken-Fried Shrimp
Chicken-fried tenderloin steak was a top seller at Rebecca’s Table, but I have my bartender to thank for the idea that led to this variation. One night, a couple sat down to eat dinner at the bar, and the husband ordered chicken-fried steak. His wife liked the idea, just not the red meat part of it. So the bartender says, “Why don’t we do some shrimp for you?” She was thrilled. Served with chipotle ketchup, adapted from a recipe by Texas chef and author Terry Thompson-Anderson, chicken-fried shrimp became a best-selling appetizer. It’s also a natural for informal entertaining. Once guests arrive, fire up the skillet, and enlist a helper to dip the buttermilk-soaked shrimp in the seasoned flour mixture. Other guests would be well advised to stay nearby. Chicken-fried anything is best fresh from the frying pan. Set the shrimp on a communal platter accompanied with a big bowl of chipotle ketchup and let guests serve themselves. I guarantee the shrimp won’t last long.
Catfish Tacos with Chipotle Slaw
I’m as intimidated about making fish tacos for California friends as they would be to make chili for me. But I’ve learned the rules: No baking the fish, no guacamole (makes the fish soggy), no flour tortillas (although there’s some dispute on that point)? And you should hear the unprintable things they say about versions that include mayonnaise! It just so happens that I agree on all those points, except for one, which my Cali-friends will discover when they read this: I have actually made pretty darn crisp catfish in the oven. When it’s just you alone in the kitchen, and you don’t feel like frying, I won’t judge.
Black Bean Tortilla Soup with Shrimp and Corn
This is like a taco in soup form. It is not a traditional tortilla soup, but a black bean backdrop for a double or triple hit of corn (stock, tortillas, and fresh kernels), plus just-cooked shrimp. Like a taco, it’s hearty and satisfying without being fussy, and once you have the black bean soup base (page 52) ready and waiting, it’s a snap to put together.
Black Bean Soup with Seared Scallops and Green Salsa
Scallops are a solo cook’s friend because, like shrimp, they come in easy-to-manage amounts, cook quickly, and take well to all sorts of preparations. Here, they help bulk up black bean soup into a meal. Look for “dry-packed” scallops, which are shipped without the extra water and additives that dull the flavor of wet-packed scallops, making them sweeter and easier to get a nice crust on. If you can find them, you don’t need to rinse and pat them dry.

Braised Onions with Raisins and Almonds
Braised onions with raisins and almonds is a Spanish-inspired dish from the southwestern border of the United States. It makes a sweet topping for rice or side to any barbecued meat.
Shredded Meat for Tacos, Tortillas, Burritos, and Casseroles
Shredded meat is a staple in both Mexican and southwestern kitchens, and is a perfect side to make in a slow cooker. It can be used to fill tacos, burritos, and tostadas or can just be tossed with scrambled eggs for breakfast. The following simple recipe can be made with beef, pork, or even turkey. Cooking times may vary according to type and cut of meat, but in general, when your desired result is meat that can easily be shredded, anything cooked for 6 to 8 hours ought to work out fine.
Southwestern Cornbread Pudding
This bread pudding is savory, not sweet. A melding of the delicious southwestern flavors of corn, chiles, coriander, cumin, and cheese, it makes a wonderful side dish to a roasted loin of pork or beef.
White Bean Chili
White chili is usually made with white beans and fresh green chiles rather than the usual red or pink beans and dried red chiles. The bit of cream gives it a very rich mouthfeel. White chili is a wonderful change of pace on a cold winter evening by the fire.

My Favorite Chili
Chili, a quintessential slow cooker meal, is not a traditional Mexican dish. Rather, it seems to be Southwestern in its inception. It is sort of a combination of the dried beans and chiles so readily available in the Southwest with the wonderful spices brought by Europeans to Mexico. This particular version is generously seasoned with spices and chili powder and has been pieced together by me over the course of a few years. The following recipe makes a big mess o’ chili and is best done in a 6- or 7-quart slow cooker.
Zesty Green Gazpacho
A splendid no-cook soup that will awaken taste buds dulled by summer heat. This soup can be eaten as soon as it is made, but definitely benefits from having time to stand for several hours so that the lively flavors can mingle. This soup is a great first course for a Mexican or Southwestern-style meal.
Southwestern Fresh Corn Stew
While fresh local corn is abundant in early fall, the most tempting way to eat it is right off the cob. But cooking with fresh corn can be equally appealing. Its sweetness and crunch can’t be matched by frozen corn kernels. Serve this with Hearty Bean Bread (page 146) and a green salad for a filling meal.
Green Chile Eggs
Although the edges will puff and brown appealingly, the center of this dish may remain moist because of the amount of green chile sauce used. Green chile sauce is not salsa (although salsa could easily be substituted here). I’ve been pleased to see more companies offering jarred or canned versions that seem to be making their way out of the Southwest and into the rest of the country The amount of green chile sauce you use determines the heat level of your meal. Add another spice dimension with fresh or roasted green chiles, seeded and chopped. Although this is a vegetarian recipe that calls for meat-substitute crumbles (find these in your grocer’s freezer), you could easily add sausage, ground beef, pork, or turkey without changing anything else—likely not even the cooking time. Add chopped Canadian bacon and call it “green eggs and ham”! Consider whisking in 1/4 cup milk with the eggs for a slightly more quichelike effect.
