Cornbread Stuffing with Oysters and Andouille
Pat: In the South, most stuffing recipes call for some kind of meat, whether it’s bacon, liver, chicken, or boiled turkey, as well as some kind of stock to keep the stuffing moist. In this recipe, the briny oysters meld beautifully with the spicy andouille sausage, and the end result is a stuffing so good that you won’t want to wait until Thanksgiving to try it. For the best results, use day-old cornbread, so it has time to dry out a bit, which will enable it to absorb all the flavorful juices inside the bird.
Smoky New Potatoes and Green Beans
Gina: Green beans and new potatoes, simmered with some type of pork fat, are a classic Southern combination. This dish is one we both grew up on, and when we cook it at home, the smoky aroma of these simmering vegetables instantly transports us to our mothers’ kitchens. There are few flavors more satisfying to any Southerner than the taste of tender new potatoes and green beans that have absorbed the salty, porky goodness of a smoked ham hock.
Gina’s Collard Greens
Gina: I’m always surprised to discover that folks in these parts tend to cook turnip and mustard greens more often than collard greens. I think the perception is that collards tend to be a little bitter. But I gotta tell you, you’re sleeping on this one! Rich in vitamins and nutrients, collard greens are actually the sweetest, best-tasting leaves you can buy (turnip and mustard greens, on the other hand, have a slightly spicy, peppery taste). In this recipe, the deep, full flavor of the collard greens along with a bit of sugar and some heat from the red-pepper flakes create an irresistible sweet-and-hot pot of goodness, while the ham hocks add a note of smoke that balances out the other flavors. Pat can’t get enough of these sweet greens. Trust me on this one, ladies—this is the recipe that’ll bring your man home every night! Five bunches of collards might seem like a lot of greens, but these jokers will cook down to a fraction of their original size.
Southern Creamed Corn
Gina: Pat and I are huge fans of grilled corn on the cob, but once the girls started wearing braces (!) we had to figure out a better—easier to eat—alternative, for obvious reasons. Shucked corn in cream did the trick. After a while, the girls became accustomed to having corn served in this decadent manner, and pretty soon there was no turning back. Thus, another Neely staple was born. I think the sweetness that this method coaxes from the fresh corn makes all the difference in the world, and I know Pat agrees. When my husband serves us this dish, he always says, “Some sweet for my sweets.”
Seared Okra and Tomatoes
Pat: Few flavor combinations sing “summertime in the South” more than okra and tomatoes. Some people find okra intimidating to cook, but it’s really very simple. If okra is cooked for too long over too low a heat, it can turn slimy and limp. The secret is first searing the okra over a very high heat, then finishing it for a few minutes in the piquant tomato sauce. This method prevents the okra from getting gooey (frying okra does the same thing). Okra and tomatoes are great alongside fried fish, or any roasted or grilled meat, and they also pair well over a creamy starch like grits or spoonbread.
Nana’s Southern Gumbo
We prepared this gumbo on our “Pass It On” show, because it is a generational favorite that dates back to Gina’s Nana. Nana made it for Gina, Gina makes it for our daughters, and the hope is that someday our daughters will prepare it for their children. Gina and I love seafood and spicy Louisiana flavors, and this gumbo delivers plenty of both. It’s delicious served over Gina’s Perfect Rice (page 27). Gumbos throughout the South are made with countless combinations of seafood and meat (chicken, wild game, and spicy sausage), and ours is brimming with crab, shrimp, chicken, and ham.
White Bean Soup with Kale
Pat: Creamy, smoky white beans, simmered with some kind of pork fat, are a Southern staple, especially when served with a wedge of warm cornbread. This white-bean soup is finished with kale, a nourishing green that’s packed with vitamins A and C (the leaves are so pretty that Gina uses the green and purple varieties to decorate her party trays). Smoked sausage makes a great addition to this soup, and what we do then is leave out the bacon and add 1/2 pound of sliced smoked sausage instead. (You’ve heard the expression “an eye for an eye” in Memphis we say “a pig for a pig.”)
Florida Coast Pickled Shrimp
Gina: We’ve taken a few memorable family vacations to the Gulf Coast of Florida, which is a great place to indulge our passion for the beach and fresh shrimp. These pickled shrimp are perfect for entertaining, because they are actually best made a day in advance. They’re delicious on their own, or eaten with buttered slices of French bread.
Pimento Cheese Melts (aka Southern Crostini)
Gina: A few years ago, Pat and I had the honor of visiting Madrid, Spain, to cook at the U.S. Consulate there. The idea was for the Spaniards to taste some real Southern barbecue (see page 52). Well, my poor husband got straight off a plane and headed for a makeshift smoker, while I got to lounge in a fabulous hotel and drink champagne. But the dinner turned out to be a huge hit, and afterward we got to celebrate by exploring the city and hitting several tapas bars. When I saw that the streets and the restaurants were still buzzing with folks of all ages late into the evening, I decided the Spanish have it down—they know how to have a good time. When Pat and I got home, we decided to put our own spin on a favorite tapas dish. Down South, we like our “crostini,” or grilled toasts, with a little soul. So we started with a rich, creamy pimento cheese that we love and gave it a little kick with the addition of some cayenne pepper. For a truly Southern spin, we added crumbled bacon (Pat and I will find a way to incorporate pork into just about any recipe). As a finish, we slathered the cheese spread on toasted bread and sprinkled the crumbled bacon on top, then slipped the toasts under the broiler until the cheese was just melted. Good Lord, what’s not to love? These toasts are amazing with chilled white wine. Covered and chilled, the pimento-cheese spread will last for up to 3 days in the refrigerator.
Warm Artichoke and Collard Greens Dip
Gina: My friends call me the collard-green queen—I love to cook them up any and every way imaginable. So it was only a matter of time before I decided to replace spinach with collards in the classic artichoke dip. Ohmigoodness, the results were even better than I anticipated. If you want to surprise your friends with something delicious and unexpected, this is the appetizer to prepare. You can buy baked pita chips to serve with this dip, but they’re so fun and easy to make that you might just want to do it yourself (which also gives you a little more control over the amount of salt and oil used). This dip goes well with salsa and sour cream on the side.
Barbecue Deviled Eggs
Pat: When we were growing up, deviled eggs were a staple at any celebration, like a Fourth of July picnic or Easter Sunday brunch, and at family feasts at Momma’s, alongside fried chicken, pork roast, green beans, and creamed corn. In my mind, deviled eggs are an appetizer or a snack, something you grab when you’re passing through the kitchen or hanging out by the picnic table. But every once in a while, Momma served deviled eggs with tuna fish and crackers for a light Sunday dinner, proving that they can work as a meal just fine. This is our spin on a great Southern tradition (one of the many joys of cooking is infusing a recipe with your own personality). The sweet, tangy flavor of barbecue sauce blends surprisingly well with rich, creamy egg yolks. Topped with thinly sliced scallions, these eggs are perfect for a picnic, a backyard party, a down-home brunch buffet, or a light Sunday dinner (thanks, Momma). Gina: I wonder what the grandmothers would say about our adding barbecue sauce?
Crusty Cornbread
Pat: A cast iron skillet is, far and away, the best pan for cooking this cornbread. In fact, we don’t prepare it in anything else. Preheating the skillet in the oven creates a crispy golden crust, and it really seems to help the batter pop up and rise beautifully during the baking process. We serve the warm cornbread straight from the skillet with a big ole wooden spoon.
Lorine’s Brown Flour Gravy
Pat: My mother, Lorine, loved spending time in the kitchen and started cooking when she was a young girl. Friends knew her as the girl in school who enjoyed taking home-economics classes and collecting recipes, and when they went looking for her they knew where to go (the kitchen). Cooking is something she has kept at her whole life, so it’s no surprise that Momma has become the best gravy-maker in our family. What makes this recipe special is that Momma learned it from her mother. It’s an heirloom, and you’re gonna love it. Our family has never prepared “white” or cream gravies; we prefer what is called a brown flour gravy, meaning the flour is browned in fat before the liquid is added, which creates a particularly rich flavor. This recipe is meant to be a guide. Feel free to adjust the fat, flour, and liquid according to the amount you want to prepare. But the proportions we give are dead-on, and will result in one of the most delicious gravies you will ever prepare. It’s slammin’ over mashed potatoes, pork roast, fried chicken, and Gina’s Perfect Rice.
Jambalaya
This Cajun dish is so associated with good times that Hank Williams named a song after it. The original isn’t so good for you, though. I made a few changes to the classic to make it easier to prepare—and much healthier. White rice has been replaced with brown, and much less fat is used to cook the vegetables and meat. Feel free to improvise by adding chicken, fish, or vegetables.
Shrimp Po’ Boys with Spicy Mayo
Po’ boys are a kind of sub sandwich from the sultry state of Louisiana, consisting of fried meat or fish served on a crispy French-style baguette. Traditionally they are made with fried shrimp or oysters, though soft-shell crabs, catfish, crawfish, Louisiana hot sausage, and roast beef have been known to make an appearance. Served hot, the shellfish, fish, or meat is dressed with some combination of lettuce, tomatoes, peppers, pickles, onions, and mustard or a spicy mayo. In this version the fat and calories are reduced to a fraction of the original by faux frying the shrimp, using low-fat mayonnaise, and replacing the traditional white-flour baguette with sprouted-grain bread.
Oysters Rockefeller
Oysters Rockefeller was created in New Orleans at the turn of the last century. It was named for John D. Rockefeller, the richest man in America at the time, because he and the dish had something in common. If you don’t overcook them, oysters are juicy and creamy and taste luxuriously rich. Without changing too much from the classic recipe (aside from reducing the loads of butter), the fat content went from 22 grams to just under 6 grams—with most of that coming from the oysters themselves. This dish is a fabulous throwback that won’t set you back. Oysters Rockefeller are baked in piles of coarse salt not just to anchor the liquid in the oyster shell but also because salt is an excellent conductor of heat.
Cajun Jumble-laya Stoup
This jumble is a lot like jambalaya, so I call it a Jumble-laya. This is one of those flexible recipes. You can substitute turkey or tender cuts of pork and beef for the chicken. Go all seafood by bumping up the amount of shrimp and adding crabmeat at the end to just heat it through. Andouille sausage is a spicy, smoky sausage with a flavor that packs a punch. It is used in Cajun-style food and is a staple in gumbo and jambalaya. Is okra not your thing? Substitute frozen defrosted French-cut green beans.
