Quicker Pho with Meatballs

Start with stock, use just about the same seasoning asin regular pho (preceding recipe), and substitute quick-cooking meatballs for chuck. The result is a relatively fast pho with all the flavor of its slow-cooked big brother. See page 500 for information on nam pla, Thai fish sauce.

Pho Bo

While pho originated in the north of Vietnam, it has become a national dish. Carts and small shops sell it everywhere, usually for breakfast (since I’m a big fan of savory breakfasts, this was ideal for me). The clear, fragrant beef broth is the flavorful base of this dish, and the sliced sirloin, noodles, and condiments provide the texture. (The sirloin must be sliced as thinly as possible, because it cooks in the serving bowl; freeze it for 30 minutes or so to facilitate thin slicing.) Information on Thai fish sauce—nam pla—is on page 500. Rice vermicelli (mai fun) is available at most supermarkets and all Chinese markets, and is sometimes called “rice stick.”

Dom Yam Gai

The subtle blend of sweet, creamy, and sharp flavors in this Thai classic makes it one of the first Thai dishes most people learn to love. Although the best version I ever had began with cracking real coconuts—a chore I wouldn’t wish on an enemy—if you make coconut milk from dried coconut or use canned coconut milk, the dish is easy to re-create at home and really great. Hot and Sour Fish Soup

Unlike the viscous and peppery Chinese version of this soup on page 145, this one is brothlike and derives its heat from chiles and its intriguing sour flavor from lime and lemongrass. It’s the Southeast Asian equivalent of chicken soup, often eaten to treat a cold. See page 500 for information on nam pla.

Sambal Ikan Billis

This is the sambal traditionally served alongside Nasi Lemak, usually at breakfast; you might prefer these as a cocktail snack. For more about dried anchovies, see page 25.

Nasi Lemak

Nasi Lemak is a favored breakfast dish in Malaysia, where you get it from streetside carts and busy little restaurants that are closed by lunchtime. You start with a pile of coconut rice (which is the nasi lemak, though the name always refers to the dish) and point to what you want to eat with it—salads of pickled pineapple, deep-fried shrimp; the possibilities vary from place to place. The accompaniments suggested here are traditional and standard, and the recipes for the more unusual ones can be found in this book. Don’t feel compelled to have all of them, though it wouldn’t be hard to do so. The more things you have to eat the rice with, the more fun it is, especially at a dinner party. (I wouldn’t suggest trying to get it all made by breakfast.)

Sticky Rice

Served throughout China and Southeast Asia, sticky rice has become associated most closely with Thailand, where it is the equivalent of France’s bread, eaten at almost every meal. It’s addictive and easily made at home, as long as you plan ahead a bit. Sticky rice is one of the few grains—indeed, foods—that can be prepared without salt and still taste great.

Fried Rice

Leftover rice is not only acceptable here but practically mandatory: fresh or warm rice does not fry well, but clumps together and sticks to the wok. You need cold, stale rice, which separates during cooking. If you have neither roast pork (even the Cuban Lechon Asado, page 375, will work) nor Chinese sausage, ham is a fine substitute. No meat at all is fine, too, of course; see the variations.

Steamed Coconut Custard

Palm sugar, or jaggery, is dark, unrefined sugar made from a variety of sources, including the sap of the palm tree. It can be chunky and must be broken up; dark brown sugar is a nearly perfect substitute. This dish is great with slices of ripe fresh mango.

Sweet Sticky Rice with Mangoes

A quicker, easier version of the preceding coconut milk pudding, this simple dessert is popular at food markets throughout Southeast Asia. Great with mangoes or any other ripe tropical fruit.

Sweet Rice Flour Dumplings

These sticky, sweet dumplings, which are easier to produce than most savory dumplings, are served at New Year’s festivities throughout East and Southeast Asia. Palm sugar and glutinous rice flour can be found at most Asian markets.

Vegetables with Dried Shrimp and Coconut Milk

This dish contains a lot of flavors, but one distinguishes Indonesian cooking from almost every other: dried shrimp. These tiny crustaceans can be bought at most Asian markets and need only be soaked in hot water for a few minutes before use. (There’s also a shrimp paste, which requires no soaking; you can use this instead.) But, like nam pla—Southeast Asian fish sauce—dried shrimp are an acquired taste for many people. I like them, but I’ve also made this successfully without them when I fear guests will balk. Other vegetables you can prepare this way: I’ve never seen this without green beans, but certainly you could substitute any root vegetable for the carrot and zucchini or any other summer squash for the eggplant.

Grilled Satay

Most satays are thin slices of meat threaded through a bamboo skewer and grilled; they are almost inevitably dry. But this Malaysian version is made like kebabs, with bigger chunks of meat, which remain juicy and tender. Since they can be assembled ahead of time, they make a convenient starter, especially if you’re going to be grilling anyway. More on tamarind on page 587 and on nam pla on page 500.

Tod Mun

Tod mun—Thai fish cakes—are usually made with mackerel or other dark-fleshed fish, but shrimp are just as good, and most of my friends seem to prefer them made this way. Both mackerel and shrimp have enough natural gelatin to hold together without egg or bread crumbs or mashed potatoes or any of the other binders necessary in so many fish cakes. In fact, they have so much natural gelatin that if you over process the fish it becomes rubbery, which in fact is characteristic of tod mun. My little trick—of pureeing some of the fish and simply chopping the rest—keeps it a little softer; you can do it either way. If you make these with shrimp, they can also be grilled. See page 500 for information on Thai fish sauce (nam pla).

Lumpia Rolls

This well-known Philippine starter combines attributes of many of the wrapped foods of other countries. It’s filled like an egg roll, has an egg wrapper like a crêpe, and is served warm but not fried. All the components, which can be varied according to what you have in your kitchen, are cooked before assembly.

Lumpia Wrappers

These are very similar to crêpes—the staple of Brittany (page 86)—but thinner and more delicate (and the filling, which follows, is like nothing you’ll find in the French tradition). Though they’re often called “Philippine Egg Rolls,” lumpia—again, like most crêpes—require no cooking once they’re filled.

Chicken or Shrimp Egg Rolls

This finger food is popular in the south of China, Southeast Asia, and, of course, many American Chinese restaurants. It’s perfect for parties and super easy to make, especially with store-bought egg roll wrappers. They can be filled an hour or two ahead of time and fried immediately before serving or—though it isn’t ideal—fried an hour or two ahead of time and crisped in a warm oven later.

Meat Samosas

One of the world’s great dumplings, the samosa has migrated to Southeast Asia and elsewhere. As with most dumplings, the filling is easily varied. And, as with most dumplings, you can use store-bought dumpling wrappers or the simple homemade ones on page 62. But the super rich wrappers here are really the best. Traditionally, you would deep-fry samosas, but more and more often they are baked. They’re terrific either way.

Crisp Dried Anchovies

Like the nut and bean preparations on pages 27–28, these savory crisp snacks from Southeast Asia (closely related to the similar recipe from Korea that follows) can be eaten out of hand. Also like them, they’re great with beer. Though unfamiliar to some people, they’re instantly liked by most. (You can buy dried baby anchovies—described on page 25—at most Asian, and some Latin, markets.) In Thailand, they’re sometimes tossed with Fried Peanuts (page 27), a lovely little combo.

Goi Cuon

I learned how to make “summer rolls” in a tiny village in the Mekong Delta. I was not only the only non-Vietnamese at the table; I was also the only male. My pathetic technique was laughable to my co-workers, but I quickly got the hang of it. So will you. Rice paper wrappers, sold in Asian markets, keep forever. Their flexibility is truly amazing, and the simple variation will give you an idea of the different directions in which you can go. This is just a basic outline; these rolls can be filled with infinite variations of vegetables, meat, and even fruit, so don’t worry if you don’t have one or two of the ingredients here. You can cover these with a moist towel or plastic wrap and keep them for about an hour, no longer, before serving.
