Mexican
Tamales
Labor intensive, yes, but typically made as a group project and a fun one at that. The tamales in the frozen food aisle may be a quick fix, but they’re barely worth eating. These, on the other hand, are worth the effort. If you are using any of the chicken fillings, shred the chicken finely, then mix with the accompanying sauce. You can buy dried corn husks at any market that carries a range of Latin products; same with masa harina, though finding fresh masa may be a bit more challenging, depending on where you live.
Sopa de Tortilla
This classic Mexican soup is the perfect solution for leftovers—stale tortillas, cold chicken, and overly ripe tomatoes. It can be garnished with a variety of toppings, from the classic avocado and cheese to steamed greens.
Chicken Soup with Chipotle Paste
A staple in Mexico, often garnished with diced raw onion, avocado, tomato, and a squeeze of lime. You can make the chipotle paste by buying canned chipotles in adobo (sold at almost all Latin markets and many supermarkets) and simply whizzing them in a blender. The results, however, are searingly, blindingly hot and not at all like what you get in restaurants in Mexico, where the paste is made from scratch. Fortunately, making the paste from scratch takes all of 20 minutes, 10 of which are spent soaking dried chipotles (available at most places that sell dried chiles or online at www.penzeys.com and other mail order sources). The lovely brick-red paste, used in small quantities, converts the blandest chicken soup into something hot, smoky, and delicious. Leftover paste is also great on broiled or grilled chicken or pork or stirred—again, in small quantities—into poached or steamed vegetables.
Caldo Cantina
A great place to use leftovers and to improvise. Plenty of lime, raw onion, and cilantro are key; if you include them in abundance, the soup will be delicious and authentic. Though I have never seen it in Mexico, you could use vegetable stock here if you prefer.
Arroz a la Mexicana
Unlike the often inedible rice that comes on every combo platter of tacos or enchiladas in this country (and, increasingly and sadly, in Mexico as well), this is the real thing. It’s the perfect side dish with any Mexican meal, especially when paired with Refried Beans (page 438). Whereas Spanish rice gets its color and flavor from saffron, the source here is fresh tomatoes.
Sopa de Habas
When families in Mexico give up meat—either for Lent or for other reasons—they turn to soups like this one. You might have trouble finding fresh favas, though Latin markets frequently stock them, especially in spring, and I’ve even seen them at supermarkets in recent years. Their wonderful flavor has no exact match, but fresh peas are a good substitute. The best chile for this dish is the mildly hot dried chile negro; it’s best when toasted, which is an easy enough process: put the chiles in a dry, ungreased skillet over medium heat and cook, turning as each side browns, until browned and fragrant, 5 to 10 minutes.
Recado Rojo
Classically used for Cochinita Pibil (page 351), this gorgeous, bright red paste can be smeared on any meat you’re about to roast or grill. Its color belies its flavor, which is not at all hot (though you can throw a chile in there if you like). Annatto—or achiote—is something you’ve probably encountered unknowingly, since it colors processed cheeses, margarine, and lipstick. The triangular, brick-colored seeds of the annatto tree have been especially important in the Yucatán peninsula and South and Central America for centuries; make sure the seeds you buy are bright red, smell earthy or musky, and taste slightly peppery. Whole seeds keep for a year or more in a tightly covered container.
Xec
A tiny little side condiment served with grilled chicken or fish that can make any meal sing. It’s fine without any chile at all, but I like a touch. This is a very fragile dish; make it at the last minute and serve it all at once. It will go fast, believe me.
Churros
In the world of fresh pastry, few things are quicker than churros, the crisp, crullerlike strips of fried dough that are still popular in Spain, where they originated, but perhaps even more so in Mexico. In fact, there are few breakfast or last-minute late-night snacks that can match a batch of churros. Churros served at restaurants can be awful because they’re fried in stale oil and made in advance. But make them fresh once, for breakfast or dessert (ideally, you’ll serve them with Chocolate Español, page 665, or Mexican Hot Chocolate, page 664) and you will have a reliable addition to your repertoire.
Cheese and Chile Quesadillas
In their simplest form, quesadillas are warm corn tortillas encasing spicy melted cheese, but the basic construction simply begs to be built upon. See the variations and keep in mind that the possibilities are endless—take advantage of what you have in the refrigerator or garden. Fresh corn tortillas are best, but flour ones are acceptable. You may dry-sauté the quesadillas, with no oil, in a nonstick or well-seasoned cast-iron skillet.
Queso Fundido
The original and superior version of nachos with cheese has the smoky spiciness of roasted chile and chorizo. While it can be served with tortilla chips, it is best scooped and wrapped into warm corn or flour tortillas. This makes a great simple lunch served with salad or soup.
Taquitos
This is an amazing finger food, best set up using a simple assembly line of two or even three people. (You can also roll all the taquitos ahead of time and fry them immediately before serving; if you do this, and have cooperative friends, it’s almost as easy to make forty or even eighty taquitos as it is to make twenty.) Best served immediately from the skillet, they can also be made ahead and reheated in the oven. Serve with sour cream, any salsa (pages 610–612), Guacamole (page 22), or a combination.
Fried Peanuts
Fried peanuts will amaze your guests with their crunch and fresh, distinctive flavor. Add different kinds of nuts if you like, as long as they are “raw” to begin with (the industrial shelling process uses enough heat to cook the nuts, at least a little bit). The best raw peanuts are usually found in the fall (peanuts are an exception; the best season for other nuts is spring), when they are fresh and tender. Like any nuts, these are great with drinks, especially beer.
Guacamole
In Mexico, guacamole is traditionally made in a molcajete, a mortar made from volcanic rock. It’s a lovely tradition, but since you probably don’t have a molcajete, use a bowl and fork or a potato masher. The admittedly more complicated variation that follows is superior but not nearly as quick.
Ceviche
In any coastal region where you find limes, you’ll find ceviche, going by one name or another. In Mexico, it’s frequently made with a combination of scallops, shrimp, conch, and octopus (the last two usually precooked to the point of tenderness), and those are all good fish for the mix. If you can find spanking-fresh fillets of your local white fish, you can use that here too, although scallops alone are easy and fabulous. (They’re also the safest shellfish to eat raw, but if the whole thing makes you nervous, see Mock Ceviche, page 35.) If you happen to have a couple of different colors of bell peppers, mix them; it’ll make the dish really sparkle.
Boca Negra Picosito con Salsa Dulce de Tomatillo
I wanted to include a dessert where chocolate was the main ingredient because, well, because people love it. This recipe was previously published in Rosa’s New Mexican Table by Roberto Santibañez and is one of my proudest creations. The tomatillo sauce may seem unusual, but trust me, you will be pleasantly surprised, and the smokiness of the chipotles gives an incredible depth to this scrumptious dessert. Boca negra cake got its name because, once you dig in, your mouth will be covered in luxurious chocolate. Be sure to use high-quality chocolate because it will make all the difference in the world. Serve it as is or with a bit of lightly sweetened whipped cream, vanilla ice cream, or Natilla (page 163).
Pastel de Queso con Membrillo Picosito
Cheesecake is one of my favorite desserts, and I love the kind that is a little bit sour. This one is made with a little crema and a hazelnut crust. I like to serve it with quince, a natural pairing with cheese. I also gave it a little heat from arbol chiles to showcase the wonderful combination of sweet, sour, and spicy that is popular in modern Mexico.
