Ingredients

1 1/2 pounds thick-sliced good-quality baked ham such as Virginia
1/2 cup heavy cream
1 firm-ripe Camembert, chilled, rind discarded and cheese coarsely chopped
1 large egg yolk

Preparation

  1. Step 1

    Preheat oven to 350°F with rack in middle.

    Step 2

    Overlap ham slices on a baking sheet and cover with foil. Bake until just heated through, 8 to 10 minutes.

    Step 3

    Bring cream to a simmer, then whisk in cheese until smooth. (If necessary, purée in a blender, then reheat.) Whisk in yolk and cook, whisking, 1 minute.

    Step 4

    Serve ham with sauce.
