Red Cabbage Slaw

Ingredients

1/2 head red cabbage, finely shredded
1 small red onion, halved and thinly sliced
1/4 cup rice vinegar
1/2 cup fresh orange juice
1/4 cup canola oil
1 tablespoon honey
1/4 cup chopped fresh cilantro leaves
2 tablespoons finely chopped fresh mint leaves
Kosher salt and freshly ground black pepper

Preparation

  1. Combine the cabbage and onion in a large bowl. Whisk the vinegar, orange juice, oil, and honey together in a small bowl, and pour over the cabbage. Add the cilantro and mint, and season with salt and pepper. Let sit at room temperature for 20 minutes before serving.
